There are so many ingredients, so many types of flour, so much to try and so much to learn. I always end up picking lots of stuff for baking every weekend. Have you noticed the types of flours available in the grocery stores in US? Other than the regular flour, there’s almond meal, buckwheat flour, coconut flour, oats flour, tapioca flour and the list goes on. I have been thinking of buying different flour and try baking with them to see how it turns out. Last week I found this at Costco and so I got around baking these cookies using coconut flour. Coconut-Flour-Chocolata-Chip-Cookies-1-notitle-cwm Now I should have done some research about coconut flour before baking but I didn’t and went on to bake straightaway. I dropped the cookie dough on the baking sheet like I normally do and put it in the oven to bake. After 10 minutes, I came back and saw that the dough was lying as it is on the baking sheet. The cookies had not spread at all! I later read that these cookies do not spread as there’s no gluten in coconut flour. Well now I know! Coconut-Flour-Cookies-notitle-cwm I also read that one should use more liquid while using coconut flour as it’s rich in fiber and absorbs all the liquid. I didn’t really use much, just 1 egg and no oil but my cookies turned out fine. I mean they tasted great and were not dry at all. But if you think the dough looks too dry, add 1 more egg or some coconut oil. Coconut flour is gluten free and is rich in protein and fiber content so these cookies are not only tasty, they have health benefits too.

Yield: Around 20 cookies

Method

1. In a bowl, sift together coconut flour, all purpose flour, salt and baking soda. Set aside.

2. In the steel bowl of your stand mixer fitted with paddle attachment or using hand mixer, cream together the butter and both the sugars.

3. Add vanilla and egg and mix till well combined.

4. Add in 1/2 cup flour, mix at slow speed until well combined and then add the remaining flour.

5. Fold in the chocolate chips and mix the batter for 1-2 minutes till the dough looks ready.

6. Since these cookies do not spread, take around 1.5 tbsp of dough and shape it round using your fingers.

7. Bake in the oven at 350 F degrees for 11-12 minutes.

8. Take them out of the oven but leave the cookies on the baking sheet for 2-3 minutes before putting them on wire rack to cool completely. Coconut-Flour-Cookies-5-notitle-cwm * You can make these cookies using 50% coconut flour and 50% all purpose flour.

* These cookies will not spread so shape them with your hands before putting them to bake.

* Add 2 tbsp of oil and 1 extra egg if the dough looks very dry.

  • ½ cup unsalted butter at room temperature
  • 1 cup coconut flour
  • ½ cup all purpose flour
  • ½ tsp baking soda
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • ½ tsp vanilla extract
  • ¼ tsp salt
  • 1 egg
  • 1 cup chocolate chip

Instructions

  1. Love these! I made them with two eggs and they were still dry. I had trouble eating them because it felt like I was inhaling the crumbly cookie made me feel like I might choke. Next time I will add coconut oil along with two eggs. Delicious other than that minor detail!
