Easy Iced Mocha Mint Frappe is a refreshing treat to enjoy this summer!

Last few days of summer remaining and all I crave these days is refreshing drinks. Of course being an Indian, I grew up having chai but I could never understand how people would drink chai @ 115 F in Delhi during summers! Now don’t ask me why and how because I clearly don’t get it. It was a everyday thing, I would come back from college, it would be super hot and humid (sometimes there won’t be any electricity either!) and I would see my mom, dad, grandmother and everyone else enjoy their evening cup of chai. Seriously to see them drink chai in that weather always made me more restless! I need my chai in the morning and I absolutely can’t do without it but as it gets hotter in the day, I just cannot even think of gulping down a hot drink. These days, my favorite way to cool off during the day is International Delight Iced Coffee.

Mocha Mint Frappe Recipe

Actually I enjoy iced coffee throughout the year but more so during summers. But as much as I love it, I don’t always have the time to go a coffeehouse to grab one. Especially when you work from home all day, you really don’t feel like going out. Which is where International Delight Iced Coffee makes things so much more convenient and affordable. When you have ready to drink iced coffee at home, then all you need to do is pour it over ice and and enjoy and that too in the comforts of your own home!

Mocha Mint Frappe CollageWhile iced coffee is great on it’s own, you can make it even more special by adding it to recipes, like in this Iced Mocha Mint Frappe. It comes together so quickly and tastes amazing! To make this frappe, you literally need 10 minutes. All you need to do is blend together International Delight Iced Coffee – Mocha, your favorite chocolate ice cream, mint extract and some ice cubes. Pour into glasses and enjoy, of course some whipped cream on top is mandatory! Here’s the thing though, the mint flavor can real overpower the entire drink if you add too much of the mint/peppermint essence. I thought 1/4 teaspoon was good enough but you can always adjust to taste.

Method

To a blender add  International Delight Iced Coffee – Mocha and then add scoops of your favorite chocolate ice cream.

Add in the mint extract.

And some ice cubes and blend away till completely smooth. Set aside.

Add cold heavy cream to the steel bowl of your stand mixer [or use your hand mixer]. Start beating the cream using the wire whisk attachment.

Add granulated sugar and mix.

Beat the cream till it forms peaks.

Pour the mocha mint frappe into glasses and top with homemade whipped cream. Garnish with fresh mint leaves and enjoy!

I found International Delight Iced Coffee in the refrigerated tea/juice section at my local Walmart. So make sure to check out the refrigerated section at your next Walmart visit and grab some of this iced coffee!

Ingredients 

  • 2 cups International Delight Iced Coffee - Mocha
  • 2-3 scoops chocolate ice cream
  • few ice cubes
  • 1/4 teaspoon mint extract

whipped cream

  • 3/4 cup heavy cream
  • 1 tablespoon granulated white sugar

mint leaves, to garnish

    chocolate syrup, optional, to garnish

      Instructions
