Nothing better to start your fall mornings than these Pumpkin Espresso Muffins. These are packed with some wonderful fall flavors and are just perfect to be enjoyed with a cup of coffee!

So with fall knocking on the door, it’s obviously time for all things pumpkin! Seriously I wait for this season all year long. It’s not that you can’t bake with pumpkin in spring or summer but there’s something so comforting about baking with it during fall & the holidays. Isn’t it? My parents have never had pumpkin in cakes, muffins etc. before so I took them to the Cheesecake Factory last weekend and made them eat the Pumpkin Cheesecake. They actually loved it, now I wish we were in Seattle, I would have made them these Pumpkin Espresso Muffins!

There’s nothing that I enjoy more than a muffin and a cup of coffee for breakfast, especially during fall. The crisp cool air and a cup of coffee, there cannot be a better way to start your day! And it becomes even better when you have one of these Pumpkin Espresso Muffins to go along with your coffee.

Recently I took the NESCAFÉ® Taster’s Choice® coffee challenge and realized how easy it can be to make a perfect cup of coffee in no time! You guys know that I have been terribly busy these days because my parents are here and there is so much going on. So much so, that I am not even getting 8 hours of sleep and in the mornings I really feel like a zombie. So when I received this mission kit from NESCAFÉ®, I was really excited to try this instant coffee.

What I loved most about NESCAFÉ® Taster’s Choice® coffee was that how easy it made the whole coffee making process. It has such a rich flavor and all you have to do to enjoy it is to add some hot water! Taster’s Choice® coffee comes in 6 delicious flavors and roasts in 2 convenient forms – the glass jar (the packaging is so pretty!) and the stick packs. I have to say that stick packs have made my life simpler. These days I carry them in my bag on my way to the hospital. Long hours in the hospital obviously call for some coffee and with these sticks packs, I only need to add water to make myself a perfect 8 oz cup of coffee. Yes, they updated the size of the stick packs so that now there’s enough coffee to make an 8 oz cup!

Since this instant coffee had such wonderful taste, I was tempted to use it in a recipe and so I made these Pumpkin Espresso Muffins. I mean combining pumpkin and coffee can never be a bad idea, isn’t it? Again, adding coffee to the batter was super easy because NESCAFÉ® Taster’s Choice® coffee mixed so well with everything and gave these muffins a wonderful coffee flavor.

If the coffee in the muffin wasn’t enough, I also added some coffee glaze on top and I strongly recommend you do the same! It just intensifies the coffee flavor and I so loved it! Method

*Line a 12 count muffins tray with liners or spray with a nonstick spray. Set aside.

 

In a bowl toss together all purpose flour, sugar, baking soda, salt, cinnamon powder and pumpkin pie spice. Set aside.

Using the paddle attachment of your stand mixer or using your hand mixer, beat together pumpkin puree and eggs till combined.

Add vanilla extract and mix.

Dissolve 3 teaspoons NESCAFÉ® Taster’s Choice® Coffee in 3 tablespoons water. It will dissolve instantly. Add the coffee mix and also the oil and mix till combined.

Start adding the flour mix, alternating with yogurt and starting and ending with flour. So add flour in 3 parts and yogurt in 2 parts. Mix till combined.

Remember to not over-mix the batter. Few streaks of flour is okay.

Fold in the chocolate chunks, if using. You may also use chocolate chips here.

Fill in the liners with the batter right till the top. Add some extra chocolate chunks on top, this is optional, I do this for presentation purpose only. Bake the muffins for 5 minutes at 425 F degrees and then keeping the muffins inside the oven, reduce the temperature to 350 F and bake for additional 15-17 minutes or till a toothpick inserted in the center comes out clean.

Allow the muffins to cool completely before pouring over the glaze. To make the glaze dissolve NESCAFÉ® in water. Take powdered sugar in a bowl, add the dissolved coffee and milk to it and mix till everything is well combined. Pour the coffee glaze over the muffins and enjoy these pumpkin espresso muffins with a cup of coffee!

* These muffins are not super sweet and I like them that way. The glaze makes them more sweeter. You may adjust the amount of sugar to taste.

Ingredients 

Muffins

  • 1.5 cups all purpose flour
  • 3/4 cup granulated white sugar
  • 1 teaspoon baking soda
  • 1.25 teaspoon pumpkin pie spice
  • 1/2 teaspoon cinnamon powder
  • 1/4 tsp salt
  • 3/4 cup pumpkin puree
  • 1/4 cup oil I used canola oil
  • 3 teaspoons NESCAFÉ® Taster’s Choice® Coffee dissolved in 3 tablespoons water
  • 1/4 cup yogurt I used plain yogurt
  • 3/4 teaspoon vanilla extract
  • 2 large eggs at room temperature
  • 1/3 cup chocolate chunks optional

Glaze

  • 1 cup powdered sugar
  • 3/4 teaspoon NESCAFÉ® Taster’s Choice® Coffee dissolved in 1 teaspoon water
  • 2 tablespoons milk
