Vegan Zucchini Corn Patties

Do you like Zucchini? I guess it’s one of those veggies which you either love or hate, there’s no middle way here. Me being a complete veggie person love it but then I love every damn veggie in this world so my husband says my opinion doesn’t count! Anyway he’s a picky eater so it takes little efforts to make him eat a vegetable like zucchini. If I just stir fry it and give it to him, he will not eat it. However if I make these patties, then that’s a different story altogether, he would happily eat it.

Vegan Zucchini Patties Recipe

These vegan zucchini and corn patties are quick, healthy and easy to make. I used rice flour as the binding agent in these patties, you can also use all purpose flour or chickpea flour (besan) in place. You can eat them as such and put them inside your burger or sandwich. Either way, these patties are a great way to eat your veggies!

 

Method

Peel the zucchinis and set aside. I used 3 medium sized zucchinis.

Finely grate/chop zucchini using a food processor. Add some salt to the grated zucchini and let it sit for 20-30 minutes. This way the zucchini will release all it’s moisture.

After 20 minutes, squeeze the zucchini, remove all the water and place it in another bowl.

Vegan Zucchini Patties-Recipe-Step-1Now add chopped scallion (green onion), red onion, green chili and coriander leaves. Also add yellow corn, dried dill leaves and minced garlic.

Add salt, chaat masala and rice flour.

Mix in everything together till well combined.
Vegan Zucchini Patties-Recipe-Step-2Take the mixture of a size of a lemon ball and make a patty out of it. Repeat till the mixture is finished.

In a pan heat 2 tablespoons of oil on medium heat. Once the oil is hot place the patties on the pan.

Cook for 2 minutes or till it’s light golden brown in color and then flip to cook the other side.

Zucchini Patties

* Roll them in breadcrumbs for a crunchy top. You can even add 1/2 cup of breadcrumbs in the mixture. This will make these patties crispy.

* Chaat masala combines a lot of spices and has a tangy flavor to it. I love it and hence added a little in these patties, you can skip if you don’t have it even though it’s easily available at Indian grocery stores.

Ingredients 

  • 3 zucchini medium, grated
  • 3 scallions green onion, chopped
  • ¼ red onion chopped
  • 3 garlic cloves minced
  • ½ cup yellow corn
  • 1 green chili or adjust to taste
  • 2-3 tablespoons coriander leaves chopped
  • ½ teaspoon chaat masala
  • ½ teaspoon dill leaves [dried]
  • 3 tablespoons rice flour
  • 2 tablespoons oil
  • salt to taste

Instructions

  1. I’ve always loved corn fritters. What a great idea to add zucchini to them and make them vegan!

    1. Thanks Jen but these aren’t crispy like fritters. You can make them crispy though by adding breadcrumbs to the batter.

    1. Thanks Sarah! These aren’t crispy though, you can coat them with breadcrumbs and even add some bread crumbs inside the mixture to make them crispy 🙂
