So we all know that breakfast is the most important meal of the day. However I also think it’s the most challenging meal of the day especially when you are in-charge of making it! Ask me! Our everyday morning conversation goes like this.
Me: What should I make for breakfast?
He: Anything!
Me: What’s anything? Tell me what!
He: Anything!
Me: *why did I even ask him in the first place* Let me go and make “anything”!
Guys, isn’t it super annoying? It sure is! And if I suggest him to have oats for breakfast, his obvious reply would be – no oats are boring, make something else! Wow so much for giving a suggestion in the 1st place [not!]. See for people like my husband, a plain bowl of oatmeal is boring, but if you jazz it up with other ingredients, then it doesn’t remain boring anymore. Few days back after our usual breakfast conversation, I told him I am making oats and he gave the usual reaction -no, not that , I will skip breakfast and so on!
So I put on my thinking cap, added mix-ins to my favorite Quaker® Oats Old Fashioned and made this delicious Carrot Cake Oatmeal. The result? He licked the bowl clean! Coming back to my Carrot Cake Oatmeal. Carrot cake has always been one of our favorite desserts. So I knew if I added the same flavors to the oatmeal, hubby would love it and that’s exactly what happened. To make this oatmeal bowl is really simple, grate some carrots and cook them with some pecans, cinnamon and brown sugar. Once slightly cooked, add the carrots to the pan of already cooking Quaker® Oats. And that’s it! Your carrot cake oatmeal is ready. It’s so filling and so full of flavors, it actually feels like eating a carrot cake minus all the butter and sugar of course!

Method
Melt little butter in a pan on medium heat. Once the butter melts, add grated carrots, brown sugar, chopped pecans and cinnamon powder. Let it cook for a bit.
While the carrots are cooking, add milk to a pan and bring it to a boil.
Once the milk starts boiling, add Quaker® Oats to it and reduce the heat to medium and cook for 3 minutes.
Meanwhile the carrots would have cooked and after 5 minutes.
At the point remove pan from heat and transfer the carrot mixture to the pan of oatmeal.
Cook the oatmeal for another 2 minutes or so.
Serve carrot cake oatmeal in a bowl, add more milk and sugar is desired. Top with more pecans, shredded coconut and serve immediately.
* You can add more milk or sugar in the bowl as per your taste.
I found Quaker® Oats at my local Walmart in the Cereal/Granola Section!

- 1 cup Quaker® Oats [I used old fashioned]
- 1 3/4 cup milk
- 1/2 teaspoon cinnamon powder
- 2/3 cup grated carrots
- 2 tablespoons brown sugar
- 1/4 cup chopped pecans + more to garnish
- 1/2 tablespoon salted butter
- 2 tablespoons shredded coconut flakes unsweetened, for garnishing

Quaker Oats is my go to oatmeal brand for everything. I always have it in the pantry. I LOVE Carrot Cake, it’s actually my favourite, and I totally love this oatmeal dish!
