Almond Milk Rice Pudding

These days I feel like the time should stop and the next week should never come. The thought of family leaving is making me really sad. Ever since we shifted into our new house, everyone has been there and now suddenly I will be all alone after hubby goes to office. I know i’ll get busy because the house needs so much work plus there’s always my blog to keep me busy. But it was so wonderful to have family by my side for the last 1 month and now that they are leaving, I just want the time to stop. Wishful...

Quinoa Kale Salad with Sriracha Almond

My blog and my life has been full of yummy treats recently. Well, this was bound to happen since family is visiting and I do not want to miss any opportunity to whip up their favorite treats. Actually now I realize that how much I miss this, I mean I keep baking stuff and sending it to hubby’s office but the happiness you get when your parents and siblings eat your food and love it – that just cannot be matched in my opinion. I love to feed people and living alone here, that’s something I rarely get to do. And so when I get an opportunity I...

Brown Butter Green Beans With Blue Cheese

This post is sponsored by Castello Cheese. I’m Partnering with Castello for a Summer of Blue. All opinions are my own. #BluesdayTuesday

Make your summer more fun with Blue Cheese!

I think this world cannot have enough of cheese. That is the conclusion I have come to after observing the amount of cheese people like to have in their sandwiches and pizzas. My brothers are here and just few days back I made some pizza for them. I made...

Cook With Manali turns 2! + Tutti Frutti Ice Cream Recipe

Today is 19th June 2015. 2 years back on the same date, I pressed the publish button on my blog for the very first time. At that time I had no idea what food blogging was all about. I only started this blog so that I could keep all my recipes at one place and it was never meant to be more than that. My love for food and cooking grew by leaps and bounds after I moved to US. Spending time in the kitchen and standing in front of my oven for hours started to give me more happiness than anything else and it was then I realized my true passion in life. Yes...

Spinach Corn Curry

I think it’s too much of green overdose on my blog these days, just look at the last few posts it’s all green! If you have been following my blog for a while, you would know how much I love my greens. I am veggie-holic (is that a word?), no seriously I am. I usually feel like eating a plate full of only veggies for lunch and dinner. Of course I don’t get to do that often because hubby wants his roti and rice but if left to me, I would happily...

Mint Paratha

Helloooo from my new home! 😀 Yay we made it but it was so exhausting. The unpacking is still left but at least we are done with the moving stuff. Gosh, I haven’t slept properly in days. It feels like I was packing stuff into boxes forever. My family is here and that made the entire process so much easier. I can’t imagine packing 60 big boxes on my own. And oh my god you guys, out of all the boxes, 60% were from my Kitchen! My dad was like, do you have anything else besides kitchen. Well what do I say, I guess only food...

Avocado Tomato Sandwich with Baby Spinach

You know some recipes are so simple that you actually think if it qualifies enough as a recipe to share. But then the very same dishes are delicious and even though super simple to make, you cannot resist sharing them. And that’s exactly my thoughts about this Avocado Tomato Sandwich with Baby Spinach. This sandwich actually has some of my favorite things – there’s avocado (which I can never have enough of) and then there’s tomato and spinach! Talk about all the veggie goodness in 1...

Indian Paneer Puff

Yes more paneer recipes. Now that I told you how to make paneer at home, this was bound to happen. Paneer and potato puffs are very popular in India. These crispy, flaky savory pastries are usually relished with a cup of hot chai in the evening. Sometimes I have this sudden craving to eat a vegetable or paneer puff in the evening. Now back home it was easy, just get go to your local bakery and get the puffs however it’s not all that convenient here. First of all it’s hard to find puffs here and even if you find them, they are never...

Chunky Arrabbiata Sauce

Pasta is everyone’s favorite quick meal. I know we all have those days when we simply don’t know what to cook for dinner and that’s when pasta comes to the rescue. Boil some pasta and toss it up in your favorite sauce and dinner is ready in like 30 minutes or even less. The process obviously becomes quicker if you already have pasta sauce ready to go into the dish. Which brings me to this question – which is your favorite pasta sauce? My absolute favorite is pesto and my other favorite is this chunky arrabbiata...

Individual No Bake Tiramisu Cheesecake

It’s beginning to get hot here and I am loving it. Love the sun when it’s shining bright till 8 pm. It makes me feel like there are more than 24 hours in a day! And with so much going on in my life, I really need those extra hours. Days are flying with packing stuff and spending time with family but amidst all the craziness, I take out some time to make desserts. Life becomes boring if there isn’t some dessert involved on a regular basis. Isn’t it? No bake cheesecakes have been always been one of my favorite desserts because...

Red Potatoes with Dill

My family is here guys and I’m so happy and excited 🙂 I spent my whole day yesterday cleaning and cooking. These are the days when I seriously miss being in India, I mean I miss it otherwise too but when you have do everything alone, then you miss it a little more 😉 In India, we would always have domestic help to do the dishes, to wash clothes and to even cook. Now that kind of luxury is obviously not possible here, I am telling you most people miss this the most when the...

Roasted Beetroot Raita

Such a pretty color, isn’t it? I mean the color of this raita. I’m so in love with this pretty magenta! Raita is always an integral part of Indian meals, it has to do with the fact that our food is full of spices and so we do need a cooling raita to balance off the heat. Raita is nothing but a yogurt dip to which we add little seasoning. It’s mostly made of vegetables but fruit ones are also becoming popular these days, like this pineapple raita.

In my home,...
