Roasted Beetroot Raita

Such a pretty color, isn’t it? I mean the color of this raita. I’m so in love with this pretty magenta! Raita is always an integral part of Indian meals, it has to do with the fact that our food is full of spices and so we do need a cooling raita to balance off the heat. Raita is nothing but a yogurt dip to which we add little seasoning. It’s mostly made of vegetables but fruit ones are also becoming popular these days, like this pineapple raita.

In my home,...

What is your favorite post workout snack? A granola bar? A peanut butter sandwich or something else? Post workout snacks are super important especially when you lift weights and do other intensive stuff in the gym. Muscle protein breaks down during exercise and undergoes repair during post-workout recovery and to maximize recovery you need to snack on some good...

Salted Caramel Mocha

Did I mention that I am learning to drive these days? Yes, after being in US for more than 3 years I finally decided to learn how to drive. Actually all this while we have been living in downtown where everything is at a walking distance so I didn’t really feel the need. But now that we have bought our own house which isn’t actually in downtown, it finally dawned upon me that I need to learn this.

I used to drive in India but driving in India and US is as different as chalk and...

Dhaba Dal

Dals or Lentils for Indians is like potatoes or bacons for Americans. I mean you get my point right? We can’t do without eating lentils almost every day. It doesn’t matter whichever part of the country you are from, if you are from India you will be eating dal in some way or the other. We have such a huge range of lentils in India that are cooked on a regular basis. Red lentils, yellow lentils, green lentils, black lentils and so on. And then every lentil is further classified into ones without skin, with skin, whole lentil and so on. You...

Salted Caramel Sauce

The weather is warming up and we are getting lots of sunshine! yay! I am so thrilled and what adds to the enthusiasm is that we have found our own house! Yes, it took us some time but we finally found “the one” for us! My biggest criteria was that it should have a big kitchen and this one has a HUGE kitchen, like really huge and I can’t wait to move in. From 1 bedroom apartment to 2500 sq ft house, it’s definitely going to be a huge transformation. We will be moving mid-June and so things might be a little slow...

Mango Ginger Lemonade

My husband’s favorite season is here and yes it’s only because he gets to eat mangoes. I think 90% of the Indian population is obsessed with mangoes, I don’t blame them though. You do get the most amazing mangoes in India, the ones we get here in USA can never match up to them. The Indian mangoes are so sweet and bursting with flavors, each variety has it’s own unique flavor. And that is the reason why mango is everyone’s favorite fruit in India!

For the last few...

Roasted Cauliflower Soup

Oh my god you guys, I had absolutely the worst time in the kitchen yesterday. It was like whatever I touched, turned into a disaster. Cooked vegetables fell on the ground, onion got burnt [jet black!], spilled honey on kitchen counter and so on. I was so drained out by the end of it, that I did not even have the enthusiasm or patience to click pictures of the food.

I think it happens with all of us at times, isn’t it? When nothing seems to be working. The only thing I keep...

Tofu Pineapple Coconut Curry

Happy Monday! I’m kicking this week off with a very flavorful recipe of Tofu Pineapple Coconut Curry. I have mentioned before tofu is not my favorite, but I do it enjoy it once in a while especially when it’s combined with some of my favorite ingredients like pineapple in this recipe! This recipe is seriously jam packed with flavors. It’s healthy, vegan and great with rice or noodles. This recipe started off as an experiment but I was so pleased with the end result. The pineapple added a nice touch to balance out the...

Strawberry Kulfi

I go crazy during this time of the year for berries. They are available in abundance and so delicious. I swear I want to buy all the big boxes in the grocery stores. But considering how much I waste stuff [:(] I am really trying hard to buy only what I need. Did I need this big box of strawberries from Cosctco? No. Am I glad I got it? YES YES! Because I got to made this delicious and creamy Strawberry...

Pudina Aloo – Minty Potatoes

The weather has been really weird here, I mean I thought it was spring and it was supposed to be warm. But all of a sudden for the last 2 days, it has been really cold, like there’s a chill in the wind like it’s in December or January. Crazy right? I hope things change pretty soon! When the weather is cold, I crave for comfort food and I am sure I am not the only one who feels like this. For me like many other Indians comfort food is rice, dal (lentil) and some potatoes on the side and so I made these ridiculously simple...

Strawberry Lassi

Spring is finally here with Easter less than a week away. While I always want to share dessert recipes for holidays this time I am making an exception. Today I am sharing with you a super simple recipe, which traditionally doesn’t belong on the Easter table but I see no reason why it shouldn’t?! It’s fresh, delicious and perfect for spring. I think that qualifies my Strawberry Lassi for the Easter brunch. Isn’t it?

Lassi refers to any yogurt based drink in India and it’s quite popular in US as...

Broccoli Sriracha Omelette

What do you think people around the world eat for breakfast? I mean the most common stuff? Cereals, toast, eggs are few things which come to my mind immediately. These are universally popular, of course it helps that they are all super simple to make with minimal prep work. I do eat cereals and toasts on a regular basis especially on days when I get up late and have no time to prepare parathas or other Indian breakfast. But if there’s one thing I do not make often, it has to be eggs. Husband is not too fond of eggs, I mean he is okay with them in...
