Lemon Curd Cupcakes

With the clock moving forward by an hour yesterday, spring is almost here, even though I hate losing an hour. But seriously it has been so sunny here that I feel like it’s summers already with temperatures in mid 60s. I love summers [in US of course, they are not fun in India with 115 F degrees!] because other than the amazing weather and lots of sunshine, I love all the delicious fruits and veggies that we get during this time of the year. Yum!

I guess I’m the not the only one obsessed with cinnamon. It’s one of the most popular spices especially when it comes to baking and there’s a reason for it. You add it to any baked good and the flavor just doubles, really! This dish brings back so many memories. Aloo matar tehri is a kind of vegetable pilaf especially popular in the state of Uttar Pradesh (UP) in India. Even though I grew up in and around Delhi, my origins are from UP and so this was something mom would often make for dinner when she was not in the mood to make dal and roti.
