Indian Spicy Scrambled Eggs

This is only the 2nd egg recipe that I am sharing on my blog, not counting of course the dessert recipes where I almost always use eggs. I guess this proves that I am not very fond of eggs, it’s fine as long as I use it in baking but I don’t eat like an omelette or boiled egg every day. There was a time when I used to eat a boiled egg every day but now I am trying hard to make it a habit again [to include some protein in my diet] but it’s just not happening. While I am not very fond of eggs I do enjoy this Indian style spicy scrambled eggs.

Egg Bhurji

The thing with egg is that I will eat it if it’s well done and that’s where the problem lies. I just cannot eat omelette here in USA, no offence to people who love their eggs that way but for me I cannot eat until and unless it’s well done and that’s why I like making it myself. Scrambled egg or egg bhurji (bhurji = scramble) is actually also a popular roadside food in India. In Mumbai, people eat it with pav (buns). It’s spicy and very delicious!

Spicy Scrambled Eggs

This spicy scrambled egg has onions, ginger, tomato, green chili, green peas and green pepper and not to forget some spices too. I used pav bhaji masala in this recipe which is a blend of a lot of spices. Pav bhaji is a popular junk food in India and this masala is used in that recipe. You can get this masala at Indian grocery stores but if you don’t have it you can very well use garam masala in place.

You can eat it as such or with paratha (Indian flatbread) or with a bread. I ate it with my whole wheat bread and it made for a very filling and nutritious breakfast.

Method

In a bowl break two eggs. I used large eggs here.

Whisk the eggs using a fork and set aside.

Heat 1 tablespoon of ghee or butter in a pan on medium heat. Once hot, add cumin seeds and let them crackle.

Once the seeds crackle, add chopped ginger and chopped green chili. Saute for 1 minute or till ginger turns light golden brown in color.

Now add the chopped onions and saute for 2 minutes.

Add red bell pepper (capsicum) and saute for 1 minute. You can also use green pepper here.

Egg Bhurji-Recipe-Step-2Add chopped tomatoes and cook for 2 minutes.

Now add pav bhaji masala (or garam masala) and salt and mix. Cook for a minute.

Add green peas. I used frozen green peas which I had immersed in warm water for 5 minutes.

Egg Bhurji-Recipe-Step-3Cook the peas for a minute and then add the whisked eggs to the pan.

Keep stirring and cooking till the eggs look well done. I cooked for 5 minutes after adding the eggs because I like my eggs well done, if you don’t cook them for less amount of time.

Add coriander leaves and mix.

Ingredients 

  • 2 eggs large
  • 1 onion small, finely chopped
  • 1 to mato medium, finely chopped
  • ½ red bell pepper or ¼ of a big pepper chopped
  • 1 green chili finely chopped
  • ½ inch ginger finely chopped
  • 1 tablespoon ghee [or butter]
  • 2 tablespoons green peas
  • ½ teaspoon pav bhaji masala some more to sprinkle or use garam masala instead
  • coriander leaves chopped, for garnishing
  • chaat masala to sprinkle
  • salt to taste

Instructions
