Grilling season is in full swing now. We bought a really mini grill last year but now that things have settled down a bit, we want to buy a bigger one. Not like a huge grill because we don’t have that much space but at least a decent size. Any recommendations would be welcome. We saw a really cool on at Costco the other day. You could do pretty much everything in it, but we haven’t yet deciding if are getting that one.
While grilling is fun, I often don’t find enough options for vegetarians. Like I went to few BBQ last year and it seemed like people didn’t know what to grill for vegetarians. Well if you ask me, there’s so much that you can do. From burgers to kebabs and how about these grilled avocado toast sticks topped with Mango Habanero Salsa. It’s packed with so much flavor that I bet this will be a huge hit with meat lovers as well.
Everyone like avocado toast. It’s super simple and delicious. These grilled avocado toast sticks are a spin on the classic and yes these are inspired from Cheesecake Factory avocado toasts. To make these avocado toast sticks, you need a nice artisan bread, which you can get from your local bakery or bake one at home. And then it’s pretty straight forward – grill the bread sticks, spread the avocado mix and top with grilled onion, radish, arugula and salsa.
The highlight of these grilled avocado sticks is the sweet and spicy Mango salsa. It’s so good you guys! Method
Slice the artisan bread into thick toast sticks. Brush each side of the toast stick generously with oil or butter. Meanwhile heat a grill pan on medium heat.
Once the pan is hot, place the toast stick on the pan. Grill till both sides of the toast get grill marks.
Grill all the toast sticks in similar way and set aside.
Peel and slice onions, brush them with little oil and place on the same grill pan.
Once grilled, remove the onion from pan and chop into small pieces. Set aside.
In a food processor, pulse together avocado, garlic, salt, pepper and lime juice till smooth. Set aside.
Apply avocado mix on grilled toast sticks. Make sure you have a thick layer of the avocado spread.
Place grilled onion and sliced radish on top of each toast sticks.
Top with Mango Habanero Salsa. Garnish with arugula and drizzle lime juice.
Enjoy these grilled avocado toast sticks immediately!
* You may use any artisan bread of your choice. I just used one from my local bakery. Make sure to cut it into really thick slices.

Ingredients
- 500 gram artisan bread sliced into sticks
- 1 small red onion grilled and chopped
- 5-6 red radish sliced into rounds
- 1/2 cup Mango Habanero Salsa
- oil for grilling
avocado mix

- salt to taste
- pepper to taste
- juice of 1/2 lime
