Saffron, Rose, Raspberry Coconut, Pineapple Ginger, each of these lassi is super refreshing and sure to cool you down on a hot summer day!

Seattle’s weather is so unpredictable, it drives me nuts. Last week it was in the 80s, so warm that I even thought about getting an air conditioning system installed in our house! And this week, it has just been grey and cold and I basically have my heat on.

Seriously, I really wish that the weather stops playing hide and seek with us and just gives me ample amount of sunshine!

So because it was hot last week, I made myself lassi. And not just any lassi, I made myself 4 delightfully refreshing summer lassi! I am so excited to share these recipe with you guys!

How to Make Lassi?

I am sure most of you are very well familiar with this popular drink. But for those who don’t know lassi is a yogurt based drink, quite popular in the Indian subcontinent.

Lassi can be sweet or savory. It is made by blending together yogurt with water (or milk sometimes) salt or sugar and spices. 

The savory lassi is usually flavored with cumin and salt. You can also add chaat masala to it, tastes really good!

The most basic sweet lassi just has yogurt, water and sugar in it.

The most popular lassi here in the United States is Mango Lassi. I wonder why it’s so popular here. Anyone knows? Because clearly mango lassi is not the most common/popular one in India!

 4 Different Lassi Flavors for Summer!

Let’s see how we make them!

Saffron Lassi

Saffron and cardamom are 2 flavors which are usually used in Indian desserts. We combine the same flavors in this saffron lassi!

Start by making saffron water by mixing warm water with a generous pinch of saffron. To a large measuring jar/blender, add yogurt, saffron water, sugar and cardamom powder.

Blend it all together. I used my immersion blender.

Pour into serving glass, garnish with saffron strands and enjoy! [PS: you may use some ice cubes since we don’t use ice cold water here]

Rose Lassi

I have very fond memories of drinking rooh afza milkshake. Rooh afza was/is a very popular rose syrup readily available in India and my mom used to mix it with milk and give us all the time during summers! This one has the same flavors.

To a large measuring jar/blender, add yogurt, cold water, rose syrup and cardamom powder.

Blend it all together using a blender. I used my immersion blender.

Pour into serving glass, drizzle with more rose syrup and serve.

Pineapple Ginger Lassi

The sweetness of pineapple pairs so well with the strong flavors of ginger in this refreshing pineapple ginger lassi!

To a measuring jar/blender, add yogurt, pineapple, ginger, sugar, cardamom and pinch of black salt (optional).

Blend it all together using a blender.

Raspberry Coconut Lassi

I love making lassi with fresh fruits, just like this Strawberry Lassi. This raspberry coconut lassi is my new favorite!

To a measuring jar/blender, add yogurt, coconut milk, raspberries, sugar and cardamom.

Ingredients 

Saffron Lassi

  • 1 cup yogurt use plain whole milk yogurt
  • 1/4 cup saffron water made by mixing warm water with generous pinch of saffron strands
  • 2 tablespoons sugar or to taste
  • pinch cardamom powder

Rose Lassi

  • 1 cup yogurt use plain whole milk yogurt
  • 1/4 cup cold water
  • 2 tablespoons rose syrup like roohafza
  • pinch cardamom powder

Pineapple Ginger Lassi

  • 1 cup yogurt use plain whole milk yogurt
  • 1/2 cup chopped pineapple I used fresh pineapple
  • 1/4 inch ginger chopped
  • 2-3 tablespoons sugar or to taste
  • pinch cardamom powder
  • pinch black salt optional

Raspberry Coconut Lassi

  • 3/4 cup yogurt use plain whole milk yogurt
  • 1/3 cup coconut milk
  • 1/2 cup raspberries
  • 2 tablespoons sugar or to taste
  • pinch cardamom powder

Instructions 

Saffron Lassi

  • Blend it all together using a blender. Pour into serving glass and serve!

Raspberry Coconut Lassi

  • To a measuring jar/blender, add yogurt, coconut milk, raspberries, sugar and cardamom.
  • Blend it all together using a blender. Pour into serving glass, garnish with a raspberry and serve!
