Top 10 Recipes of 2017

    We made it to the end of 2017. This year was probably the worst year of my life. I lost my mom and I don’t think it can get worse for any child. In between all the challenges that life threw at me in 2017, I tried to be as regular on the blog as possible. There were weeks when I didn’t post anything just because it was so hard but you my dear readers always motivated and encouraged me to get back. I appreciate all the support I have received from each one of you this year, thank you so much from the bottom of my heart.

    Other than the struggles, I also worked on something during later part of this year. It’s a big secret that I cannot wait for share with you guys very soon. I hope it will be worth the wait. Keep an eye on the newsletter in January!

    I do this top 10 recipes of the year every year ( 2016, 2015 ,2014) just to see what worked for the blog and what you guys loved the most. This time I am changing up things a bit and sharing top 10 from the recipes that were published this year and not all time. The list in a mix of savory and sweet recipes but clearly you guys prefer my savory recipes more. Also, I shared lots of Instant Pot recipes this year and 5 of them made it to the list! That’s 50% ! You guys definitely love the IP recipes and I will keep sharing more in 2018. By the way if you love my Instant Pot recipes, then that surprise is really for you, just wait for it! ?

    Lemon and Raspberry is such a classic combination. This spring dessert was one of my favorites, so glad you guys share the love!

    9. Besan Burfi

    This is one of my favorite Indian sweet. It’s gluten -free, loaded with ghee and easy to make at home. The downside? You will find it hard not to finish the entire pan!

    8. Instant Pot Applesauce

    Who knew it was that easy to make applesauce? Seriously this is the easiest recipe of homemade applesauce ever! If you haven’t still given it a try, I definitely recommend you do that as soon as possible!

    7. Instant Pot Thai Peanut Tofu Pineapple Curry

    Thai curries are really popular and for a good reason! They are bursting with flavors like this one with peanut butter, coconut & pineapple!

    6. Vegan Three Bean Curry

    Another curry but this time its Indian. This vegan three bean curry comes together very quickly and is perfect for cold days!

    5. Instant Pot Chana Dal

    Okay clearly you guys can’t have enough of Instant Pot Recipes! This is a very basic chana dal recipe that I grew up eating. There’s nothing fancy about it but it’s super comforting. It’s vegan too!

    4. Instant Pot Mediterranean Lentil Soup

    There’s nothing more comforting than a bowl of this soup on cold, rainy days. All those spices make this lentil soup a winner!

    3. Perfect Eggless Vanilla Cupcakes

    Vanilla Cupcakes and that too eggless! That frosting makes them irresistible.

    2. Instant Pot Spinach Dal

    Instant Pot is amazing and I am so glad you guys enjoy all the IP recipes that I share. This spinach dal is comforting, one pot meal which is good for you. Are you surprised it made it to the top 2?

    1. Vegetarian Mexican Rice

    This recipe takes the no.1 spot this year! One pot meals bursting with flavors are always a winner. Mexican food is one of my favorites and this rice is so good on tacos, burritos or as a side.

      1. I just have recently been looking at your recipes. I read you lost your mother and am so truly sorry. Both my parents are in the hospital and near the end. It is painful. The one thing I have been thinking about is how I always call my mum for a check on recipes or what to cook, or what she has cooked. I have to say that you have been a nice substitute to check in on what to cook and doble check on ingredients. So thank you for helping me. Just a suggestion, if you can recommend weekly hints at what to cook such as Dhals and what vegetable dish to pair it with.
        It’s just a suggestion of what to cook and pair with, so I just get down to cooking without thinking!!! Especially during a stressful situation. Thank you for being there on my journey, good, bad and stormy. Your kindness and love of cooking is definitely healing.
