Instructions
Pre-heat oven to 350 F degrees.
Place the unsweetened coconut flakes in a baking pan. Toast at 350 degrees for 7-8 minutes stirring in between till the coconut flakes are toasted and browned.Set aside.
To a bowl add rolled oats, salt, ground ginger and chopped pecans. Set aside.
To a small pan, add honey, coconut oil and almond extract. Heat it a little till everything combines well together. Meanwhile reduce the oven temperature to 325 F degrees.
Pour the wet ingredients into the dry. Mix till the oats are well moistened with the honey and coconut oil.
Transfer the mixture into a baking sheet lined with parchment paper. Spread the mixture as a single layer. Bake at 325 F degrees for 30-35 minutes, stirring after every 10 minutes.
Remove granola from oven and let it cool down a bit. Once it has cooled down, add toasted coconut and dried tropical fruits.
Store your homemade tropical granola in airtight container and enjoy with milk, yogurt or as snack!
