Spring is here! Well it might not be the official 1st day of spring but it’s 1st of March and for me that is spring! This change in season make me so happy, as soon as it’s March 1, I start dreaming about sunshine, BBQ parties and of course ice cream! Honestly ice cream is one thing which I can never get tired of. I love it so much, that sometimes I think I have a borderline obsession with it. Obsession or not, I can’t do without my ice creams especially during this time of the year. Ice cream is delicious on it’s own, but do you know how you can make it more delicious? By making a pie out of it just like my Banana Foster Ice Cream Pie made with Blue Bunny® Butter Pecan Ice Cream. Are you drooling yet?

Ice Cream Pie

During my recent trip to Walmart, I spotted these new clear containers of Blue Bunny® Ice Cream. The clear containers are really awesome because you can now even see the flavor swirls from outside. Cool isn’t it? These clear containers also look so perfect for spring! I grabbed the Blue Bunny® Butter Pecan Ice Cream to make this banana foster pie because I wanted to make something fun and delicious to celebrate the onset of spring! And I also picked Blue Bunny® Homemade Vanilla because well let’s face it, we always need a perfect vanilla ice cream in our lives!

Blue Bunny Ice Cream

To make this pie is really simple. I made a graham cracker crust, filled it with Blue Bunny® Butter Pecan Ice cream and topped it some Banana Foster sauce. Now here’s the surprise – this banana foster is kid friendly! Yay! My banana foster sauce has no rum in it but it still has the rum flavor. How you may ask? Well all thanks to imitation rum extract! It’s super delicious and you only need 5 minutes to make it! And this banana foster sauce was so good, that I wanted to drink it all. Seriously I didn’t do that because I realized that I had to use it on top of my ice cream pie but trust me it was super difficult to resist the temptation!

Method

Pulse graham crackers in your food processor till finely crushed. If you don’t have a food processor, place the crackers in a ziplock bag and crush them using a rolling pin.

Transfer graham cracker crumbs to a bowl and add granulated sugar to it and mix. Now add melted butter.

Using a fork mix the butter till the crumbs appear like wet sand.

Transfer the mixture to a 9 inch pie plate. Press mixture into the bottom and up to the sides of the pie plate. Use back of a glass or measuring cup to really make it all compact. We are not going to bake this so make sure it’s all really pressed in.

Also press the sides using your fingers.

Once your crust is ready, place it in the refrigerator for 30 minutes. Banana Foster Ice Cream Pie-Recipe-Step-2

After 30 minutes, take out the crust and fill it with Blue Bunny® Butter Pecan Ice cream. Take the ice cream out of the freezer for 10 minutes or so before you start filling it. I like to place scoops of ice cream in the crust as you can see in the picture.

And then using a spatula smooth it up. It’s really easy this way because the ice cream softens up as you keep scooping it out making the whole process easier.

Once you have a smooth top, place the pie in the freezer for at least 4 hours or preferably overnight till the pie is rock solid. Banana Foster Ice Cream Pie-Recipe-Step-3

When it’s time to take the pie out of the freezer, make the banana foster sauce first. In a pan melt butter on medium heat.

Once the butter melts, add brown sugar, maple syrup, cinnamon powder, vanilla extract and imitation rum extract. Mix till sugar dissolves and mixture becomes smooth.

Add sliced bananas and chopped pecans. Mix to coat the banana pieces with the sauce. Heat for 2 minutes or till the banana slices become hot. Remove pan from heat.Banana Foster Ice Cream Pie-Recipe-Step-4

Take out the ice cream pie out of the freezer. Wait for few minutes for the banana foster sauce to cool down a little [this will also give some time to the ice cream pie to soften a little which makes the slicing process much easier) and then spread it over the pie and serve. Enjoy this banana foster ice cream pie!

Banana Foster Pie Recipe

* Make sure your pie is super chilled before you try to pour over the sauce and serve it. Overnight works best but a minimum of 4 hours is must.

* Let the ice cream pie sit at room temperature for 5-10 minutes before slicing it. This will make the whole process much easier. The first slice might not come out perfect and that is fine, it will be fine after that.

* The actual prep time is only 20 minutes including making the crust, making the sauce and filling in the ice cream. The remaining hours listed in the recipe is the waiting time as the pie chills. Also includes 30 minutes chilling time of the crust.

Ingredients

Banana Foster Sauce

  • 4 tablespoons unsalted butter
  • 1/3 cup + 2 tablespoons brown sugar
  • 2 tablespoons maple syrup
  • 3/4 teaspoon cinnamon powder
  • 2 teaspoons vanilla extract
  • 1 teaspoon imitation rum extract
  • 1/4 cup chopped pecans or walnuts
  • 3 medium bananas cut into 1 inch rounds
