Easy energy bites made with oats, desiccated coconut & cardamom. These coconut cardamom energy bites are sweetened with dates and maple syrup and are perfect for snacking or to satisfy your sweet cravings.

I don’t know about you but I am most definitely done with winters. Compared to the east coast, the winter is milder here. There’s no snow and temperatures are in th 40-50s. But it’s just that there is no sun and I have had enough with that. Seriously why does it always have to be grey and cold. Such weather makes me lazy. I have been skipping my workouts mostly this month, which is so bad but I am just unable to get up in the morning. Every night I plan to get up early and workout and it never happens. I know its not an excuse and the fact is that I am lazy but still some sunshine would help. Don’t you guys agree? How do you guys tackle the winter blues?

What’s getting me through these lazy days is these Coconut Cardamom Energy Bites. Remember I told you guys that we were trying to eat less of refined sugar? It was becoming challenging and so I had to make something to satisfy the sweet tooth. These energy bites taste just like coconut ladoo (Indian sweet) but of course minus all the refined sugar. Isn’t that amazing?

I love making energy bites at home. They are so easy to make and flavor combinations are endless. This coconut cardamom is one of my recent favorites and I am excited to share the recipe with you guys.

These Coconut Cardamom Energy Bites

Seriously if you are anything like me and love coconut and cardamom, then you are going to love these energy bites. The only downside of these energy bites is that it’s hard to resist eating them all in one go! These coconut cardamom energy bites are vegan and can me made gluten-free too by simply using gluten-free oats. I have used little maple syrup in the recipe and you may or may not use it. I love the flavor of maple plus I wanted to add something to bring it all together and maple syrup worked well for that. You may also add couple of extra dates in place, might do the trick!

Method

Place cashews in your food processor. Pulse till they are slightly broken/crushed. Don’t turn them into a powder since we want a nice bite in our energy bites. Remove from the processor and transfer to a large bowl.

To the same processor now add quick oats, desiccated coconut powder, cardamom powder and pitted dates.

Also add a tablespoon of maple syrup.

Pulse to combine everything together.

If the mixture looks dry, another tablespoon of maple syrup at this point and pulse again. The mixture should look little wet and you should be able to bind it.

Transfer it to the bowl with crushed cashews.

Mix in the cashews with the remaining mixture until well combined.

Shape the dough into small balls. I got 16 balls out of this mixture.

Roll the energy bites into dry desiccated coconut powder.

Ingredients

  • 1/2 cup cashews
  • 1 cup quick oats
  • 1 cup desiccated coconut powder dried
  • 1 teaspoon cardamom powder
  • 10 medjool dates pitted
  • 1-2 tablespoon maple syrup as needed
  • desiccated coconut powder to roll the balls

Instructions
