Air fryer is my favorite kitchen tool when it comes to cooking sweet potatoes. These seasoned roasted sweet potatoes get done in 10 minutes in the air fryer and make a great snack or can be added to salads, rice bowls and much more. They are soft in the center with crispy edges and are highly addictive.

In my opinion, roasting vegetables in the oven is one of the best ways to enjoy them (like roasted broccoli and carrots!). It truly brings out all the flavors of these delicious vegetables. Ever since I discovered oven roasted veggies, I never went back until I discovered the air fryer.

I still love roasting my vegetables in the oven but the air fryer makes it so quick and easy. And yes air fryer is a great little kitchen tool to have even if you are a vegetarian. I use it regularly to cook vegetables like potatoes & cauliflower to make my air fryer aloo gobi, onions to make onion pakoda and many more. Sweet potatoes are one of my favorite vegetables to eat and using the air fryer, I can prepare them in no time.

Ingredients

  • Sweet potatoes: In the US, there are many varieties of sweet potato available in the market like Japanese, Beauregard (the most common one in US) but for this recipe, I have used the Red Garnet variety. These are a little less sweet compared to Beauregard.
  • Seasoning: I have used harissa spice blend which has a mix of sweet paprika, garlic, caraway and hot chili powder. Personally, I love this blend on sweet potatoes but you can use any seasoning of choice.
  • Oil: You can use olive oil or avocado oil to roast these potatoes. Oil spray also works.

How To Cook Sweet Potato In Air Fryer

Wash and then peel 1 pound of sweet potatoes which for me were 2 large potatoes. Cut each potato into 1/2 to 1 inch rounds using a sharp knife.

Now cut each round into 1/2 inch cubes.

Repeat the same with other rounds and cut all the sweet potatoes into cubes. It is a good idea to keep them of similar size so that they cook at the same time.

Now, transfer them to a bowl and add the following: 1 tablespoon olive oil, 1/2 teaspoon harissa, 1/2 teaspoon garlic powder, 1/4 + 1/8 teaspoon salt and some crushed black pepper. Toss to combine everything together using a spatula. If you don’t have harissa, you can use smoked paprika or simply salt and pepper too.

Preheat the air fryer according to the manufacturer’s instructions. Then arrange the sweet potato cubes in a single layer in your air fryer. If you have a smaller air fryer and all the cubes won’t fit in a single layer, then do this in 2 batches. But they have to be arranged in a single layer.

Air fry at 400 F degrees for 10 minutes, shake the sweet potatoes once in between. Every air fryer is different so I would start checking around the 8 minute mark.

It can take anywhere between 8 to 12 minutes depending on your air fryer and how big or small you cut the sweet potatoes. Mine gets done in 10 minutes. Remove in a bowl and enjoy as a snack or add to your rice bowls, tacos and more!

Serving Suggestions

You can eat them as much because they make a delicious snack. But here are some fun ways to add them to your meals.

You can also add them to salads with veggies or with quinoa and much more.

How to Reheat

My air fryer (I have the Gourmia brand air fryer) has a reheat button which reheats at 300 F for 15 minutes. So I just toss these back in the air fryer in a single layer and press the reheat button. You don’t have to reheat for 15 minutes, I just do around 7 to 8 minutes and they are as good as fresh!

Manali’s Tips

  • Make sure to cut the sweet potatoes in equal size cubes. This way they will all take the same to cook.
  • Arrange the sweet potato cubes in a single layer in the air fryer. Do not overcrowd.
  • If you make a double batch of this recipe or if you have a smaller air fryer and you have to do this in batches, air fry the second batch for less time. If your first batch gets done in 10 minutes, the second batch might only take 8 minutes because the air fryer gets really hot and if you add the second batch immediately, be careful about the timing.
  • You can season the sweet potatoes any way you like. Berbere spice, cumin, coriander, and curry powder are great options. I sometimes also flavor these with cinnamon especially when I am going to use them in oatmeal.

Instructions

  • Peel the sweet potatoes and then cut each potato into 1/2 inch rounds. Then cut each round into 1/2 inch cubes using a sharp knife (see pictures above in the post). Try to cut the potatoes in the same size so that they all cook evenly in the air fryer.
  • Now, transfer the sweet potato cubes to a bowl and add the olive oil and the seasonings- harissa spice blend, garlic powder, salt and pepper. Toss to combine until the sweet potatoes are well coated with the seasoning.
  • Preheat the air fryer according to manufacturers instructions. Then arrange the sweet potatoes in a single layer in the air fryer. You might have to do this in batches if you have a small air fryer.
  • Air fry at 400 F degrees for 10 minutes shaking the sweet potatoes once in between. Since every air fryer is different, the timing may vary a little, keep an eye after the 8 minute mark.
  • Remove in a plate and enjoy as a snack or add to your favorite wraps, tacos, salads and more!

Notes

  1. If frying in batches, the second batch might get done quicker compared to the first batch as the air fryer gets really hot during air frying the first batch.
  2. You can add any seasoning you like to flavor your sweet potatoes. Cumin, coriander, curry powder, paprika, berbere spices are all fantastic options. Cinnamon is another great one if you are planning to use them for oatmeal.
