Give your pizza Indian makeover with this Aloo Chaat Pizza!

Thin slices of potatoes mixed with spices and topped with cheese and chutney- this is Indian fusion at it’s best.

Over the last few months, if there’s one thing that I have eaten a lot, it’s this- pizza. You can never have enough of it, can you?

I have ordered it from outside, I have made it at home but basically we have had pizza once a week on an average every week for the last few months (mostly since we have been confined to our house).

Other than the fact that it’s easy customizable and has so many toppings to choose from, we also like the fact that it can be re-heated so easily- something which has become so important recently with all the sanitizing measures in place.

Once we ordered an Indian thali (what were we thinking?!) and we got like 15 small boxes and we had to re-heat every single thing on a pan. Have I told you guys that we don’t have a microwave for close to 3 years now? Yeah, so that was not fun.

With pizza, it is so easy! Just pop the box straight away in the oven and it’s done. Easy to serve and eat too.

Few weeks back when we had this pizza crazing (yet again), I ended up making this aloo chaat pizza and since we liked it a lot, I made it again next week and the week after.

So, it’s safe to say that we really enjoyed this Indian inspired pizza.

This Aloo Chaat Pizza

So, what is Aloo Chaat? For those unaware, chaat in India refers to street side food which is spicy and I have to say very delicious.

Chaat is just a general term used for all the street food dishes like samosa chaat, aloo tikki, golgappe and so much more.

Aloo chaat is again a very popular chaat in the Delhi region especially. My favorite chaat stall in my city in India makes this amazing aloo chaat where he deep fries potatoes and then toss them with spices and chutney.

Oh, just thinking about it makes my mouth water!

This pizza uses the same flavors of the chaat but in the form of a pizza. If you enjoy spicy flavors in your pizza, then you will surely enjoy this.

Ingredients for the Pizza

This vegetarian pizza uses a handful of ingredients and let me talk about each one of them in detail.

Potatoes: aka aloo, of course the star ingredient for this pizza. In US, we get so many variety of potatoes. For this recipe, I have used gold potatoes.

You can use russet potatoes as well, it should work.

The most important thing for this recipe is to slice the potatoes really thin, to 1/16 inch thickness.

I don’t know about your knife skills, but I really don’t have such amazing knife skills that I could slice each slice 1/16th inch thick and be consistent with it.

So, I highly recommend using a mandoline slice. I swear by mine and can’t make this pizza without it.

It is important to slice the potatoes to this thickness in order for them to cook in the oven. We are not pre-cooking the potatoes here, we are putting then straight on the pizza.

And so for the potatoes to cook in the oven in that amount of time, they need to thinly sliced. If you have thick slices, it will not cook. Also we arrange potatoes in layers on the pizza and for that the extra thin slices is what works best.

So, please use a mandoline slicer here, that is what works best.

Pizza dough: of course you can’t make a pizza without a pizza dough right? You can use either a homemade recipe that you like or you can get dough from store.

I used pizza dough from Trader Joe’s. You can use whatever you like, the recipe uses 1 lb of dough.

Cheese: so, I have tried this recipe with pepper jack cheese and also with amul cheese (grated from the block of amul cheese that you get at Indian stores).

Both the cheese work fine, you can use whatever you like. I preferred the pepper jack but Sarvesh thought amul was better, so use what you prefer.

Also, you can increase or decrease the amount of cheese to your preference. This recipe uses a moderate amount which works best for us, but if you prefer more cheese just add more.

Spices: since it’s an Indian inspired pizza, some spices are must. I used kashmiri red chili powder (not to be confused with regular chili powder, the kashmiri red chili powder is not hot and gives a nice red color), cumin powder and chaat masala.

I have not used any other spice. The main spice here of course is chaat masala. I first use it to sprinkle on the potatoes and then I do sprinkle tons of it on the pizza once it’s baked.

Please use the chaat masala generously here, it adds so much flavor to the pizza.

Chutneys: the pizza uses two types of chutneys- cilantro chutney and sweet tamarind chutney.

The cilantro chutney is used as the sauce for the pizza and then I also use it to drizzle on top of the pizza once it’s baked.

The sweet tamarind chutney (will share the recipe soon but you can also find it at Indian grocery stores) is used only to drizzle on the pizza.

You cannot skip on any of these chutneys, these are both really important here.

And that’s about it. Those are all the ingredients for this pizza. If you want you can add some onion too. I just kept it simple with potatoes.

Tips & Notes

  • Important to use mandoline slicer for uniformly thin potato slices here. I have a mandoline slicer from OXO here and it works great.
  • Do not add salt to the potato slices at the time of adding the spices. The salt will make the slices release moisture and that will make them soggy.
  • Use a kitchen towel to pat dry the slices before transferring to the bowl.
  • If you want more potatoes in your pizza, you can definitely slice an extra potato and add more layers.

So, next time you are having a pizza night, do give this one a try!

Method

1- Rinse potatoes and then slice them into 1/16 inch slices using a mandoline slicer, do not peel the potatoes.

It’s important to slice them this thin here in order for the potatoes to cook in the oven. So mandoline slicer is kind of important here (or if you have good knife skills, then put that to use).

2- Place the potato slices in cold water for 20 minutes. Meanwhile pre-heat oven to 475 F degrees.

3- Drain the potatoes using a colander and then pat dry the slices using a kitchen towel and then transfer them to a bowl.

4- Add 2 tablespoons oil, 1/2 teaspoon chaat masala, 1/2 teaspoon kashmiri red chili powder and 1/4 teaspoon cumin powder to the potato slices and toss and mix using your hands until the slices are coated with the oil and spices.

5- Now, stretch the dough onto a baking tray using your hands. I sprinkle some semolina or cornmeal first on the pan and then put the dough on top so that the pizza doesn’t stick to the pan when it bakes.

Brush the dough lightly with oil, then prick with a fork and bake at 475 F for 4 to 5 minutes. We are just pre-baking the crust a little here.

Then take the dough out of the oven and spread 1/3 cup of cilantro chutney all over.

6- Then top with grated cheese of choice.

7- Now, start arranging the potato slices, first arrange slices in a single layer, then arrange more layers overlapping one another until all slices are arranged on the pizza.

Now, sprinkle salt on top. I do not add salt to the potato slices first as that will make them soggy.

Bake 475 for 15 minutes until the cheese melts and potatoes are cooked through. Then broil for 2 minutes to get the topping little brown.

8- Take the pizza out of oven, sprinkle lots of chaat masala (absolute must), drizzle with cilantro chutney and sweet tamarind chutney.

Ingredients 

  • 2 medium potatoes 350 grams, sliced into 1/16 inch thick slices using a mandoline slicer
  • 1/2 teaspoon chaat masala
  • 1/2 teaspoon kashmiri red chili powder
  • 1/4 teaspoon cumin powder
  • 2 tablespoons oil
  • 1/3 cup cilantro chutney
  • 1.25 cups grated cheese or more as needed, I used pepperjack cheese
  • salt to sprinkle
  • 1 lb pizza dough homemade or store bought

Instructions

Notes

  1. Do not use regular chili powder in place of kashmiri red chili powder here, that will make the pizza quite spicy.
  2. You may add onions, jalapeños as additional pizza topping here. 
  3. Do sprinkle lots of chaat masala and chutneys on pizza before serving, that really adds to flavor.

    1. If you are looking for that crust then you need a industrial oven for that, home ovens cannot reach that temperature, the best you can do it use a pizza stone, that’s the closest you can get to restaurant pizza

  2. I love this pizza, it’s delicious and fun to eat!

    I don’t have a mandoline soooo… I did try to slice paper thin pieces of russet potato. You are correct, this is very hard to do and the slices were different widths. I have good chopping skills but obviously not a master at it yet. I’m going to BUY A MANDOLINE and try it again.

    I used the trader joe pizza crust. For some reason I find it difficult to spread and it ends up with air pockets. Maybe I need to knead it longer next time. I did try to poke holes in it with a fork. Also I used one dough package (1lb), next time I’m going to use 1.5 lbs because it wasn’t thick enough in parts and I want more pizza! My baking pan was 10”x 15”.

    I’m going to make it again with the changes. It still tasted great! Thank you for using grams in your recipes manali, it’s is really helpful! I hope you have more Indian street food recipes on your site!!!

    This recipe is phenomenal! The different flavours made this so fresh and tasty. I used pitas instead of dough and it was still great. I never thought the cheese would belong but it pulled everything together. Will be making again soon!
