Chocolate Walnut Cookies are an easy treat to make for the holiday season.

Made with basic ingredients, these cookies are crispy, eggless and best enjoyed with a glass of milk or cup of coffee.

Simple buttery cookies are one of my favorite things to bake at home.

The reason is that they are super easy to make and require few ingredients which I mostly always have in my pantry.

Honestly, I do like baking cakes, pies and cupcakes too. But cookies is what I am most drawn to.

That’s quite obvious considering the amount of cookie recipes I have on the blog!

Since the baking season is here and I wanted to bake some cookies, I came up with these Chocolate Walnuts Cookies!

These Chocolate Walnut Cookies

✓ are crispy and eggless

✓ easy to make with basic pantry ingredients

✓ go well with milk or chai (or coffee)

✓ can be made vegan

To make these cookies, first start by roasting the walnuts.

You may use the nuts as such but I prefer dry roasting the walnuts for 3 to 4 minutes and then add to the recipe.

It adds more flavor!

These eggless chocolate walnut cookies call for simple ingredients like flour, butter, cocoa powder, sugar and butter.

It can’t get more basic than this, isn’t it?

You don’t even need a mixer to make these cookies although I did use my stand mixer but you can very well just use your hands to bring the dough together.

Once the dough is done which takes like 10 minutes, the next step is to chill the dough.

I like to chill these cookies so that I can slice them and bake. So, for that I shape the dough like a log, wrap it and then chill it until firm.

Preferably you should chill overnight but 2 to 3 hours should be good enough too.

Once the dough is chilled, cut the cookies into slices, around 1/2 inch thick and then bake.

Remember to not slice the cookies too thin else they will burn in the oven. I bake mine for around 20 to 22 minutes because I like them crisp.

If you prefer softer cookies, you make bake them for 18 minutes.

Give these easy homemade cookies a try this holiday season and enjoy them with chai of coffee!

 

Method

1- To a pan/skillet on medium heat, add the chopped walnuts. Roast the walnuts for 3 to 4 minutes on medium heat until fragrant. Remove from heat and set aside.

2- In a bowl whisk together flour, salt (only if using unsalted butter), baking powder, granulated white sugar and cocoa powder.

3- Add the butter. I have used room temperature butter here which I cut into small pieces and then added to the bowl.

4- Using your finger (or you can also use a fork) mix the butter with the flour until it’s well combined. You can also use a stand mixer here, like I did. Once combined, the mixture will resemble crumbs.

 

Add the vanilla and toasted walnuts.

5 & 6- Then start adding the milk, little at a time, until it comes together as a dough.

 

7- Divide the dough into 2 equal parts and then roll each part into logs, around 5 to 6 inch long and 2 inch wide.

Wrap with cling sheet and refrigerate overnight or minimum of 2 to 3 hours.

 

8-  Cut the logs into 1/2 inch wide cookies once it’s chilled. Pre-heat oven to 350 F degrees.

Arrange cookies onto the baking sheet lined with parchment paper. Bake at 350 F degrees for 20 to 22 minutes until crispy.

Cool on a wire rack and then store in an airtight container. Enjoy with a cup of coffee!

Ingredients 

  • 3/4 cup chopped walnuts
  • 1.5 cups all purpose flour 195 grams
  • 1/4 teaspoon salt optional, only if using unsalted butter
  • 1/4 teaspoon baking powder
  • 1/3 cup granulated white sugar 75 grams
  • 2 tablespoons cocoa powder 20 grams
  • 1/2 cup salted butter 1 stick/113 grams, at room temperature
  • 1 teaspoon vanilla extract
  • 2.5 tablespoons milk or as needed

Notes

  1. You can make these cookies vegan by using vegan butter and almond milk in the recipe
  2. If you are not a fan of walnuts, you may use other nuts in these cookies like cashews, pecans, almonds.
  3. I have used salted butter in this recipe. If using unsalted butter, do add the salt to the recipe.

  1. In case I am using microwave for baking how do I go about it? Normal microwave or convection mode? Temperature for the same?

    1. Hi Pallavi, sorry I can’t help here. I have never baked in microwave and so no experience there. Probably would be convection mode but please use whatever you normally use for baking in microwave.

    Happy Diwali!

    I have baked these cookies before and I love them. I was going to make these cookies 4 times the quality on the recipe. I have calculated the ingredients times 4 for Diwali but I had a question about the oven temperature. I was going to put all of them in one batch for baking. Do I still give 20-22 minutes or does that need to change?

    1. Happy Diwali! Timing remains same however if you place one pan below another than the pan on the lower shelf will take little more time

  3. Hi…do we need to wait for the chilled dough to normalise at room temperature? Or we can directly bake them after chilling…

    My favorites are- rose coconut cookies, e we hear jaggery cookies, methi mathri. I am going to bake the chocolate ones now.

      1. Thanks Manali. I did bake these chocolate ones, turned out super nice. I used 1 cup wheat and 1/2 refine white flour. I was absolutely okay with the healthy taste. I gifted them to my friends and even they liked them too. You are famous in my family❤️

    1. you can , the texture will be little different. Try 50% whole wheat and 50% all purpose. you can use brown sugar, same amount

    Hi Manali,
    I found out about your website during Thanksgiving time and have tried quite a few recipes since then. Just finished baking these walnut chocolate cookies and they turned out delicious. I believe they are supposed to be low on sweetness which is great.

      1. Manali, I baked these this morning and the bottom side burnt. I used the same cookie sheet I used last time. I tweaked the recipe by adding a little more sugar and little less cocoa powder. Do you know what could have happened?
        Also, I have another question if you don’t mind. What’s the difference in “bake” and “convection bake” options for the oven?

      2. hmm could be just the oven temperature. have u baked these cookies before and they came out okay? if yes then try reducing a minute next time, I am not sure what else can be wrong. It’s also nice to use a parchment paper or silicone mat while baking cookies.
        Convection bake means that air is circulating continuously which makes the bake more even.

    1. Oat flour will work differently, I haven’t tested the recipe with oat flour so I really can’t say how it will turn out

  8. If I replace the flour it with whole wheat will the recipe be the same and will they still be crispy?

    1. ghee in semi-solid state? yes you may but make sure it’s not melted else that will change the proportions of wet to dry ingredients
