Honey roasted almonds are one of my favorite snacks to make at home! Sweetened almonds with a touch of salt are highly addictive!

I don’t know about you but I love candied nuts, these little treats are so addictive and so delicious that it’s hard to keep your hands off them. Whenever we go to farmer’s market I see these little shops selling delicious looking candied nuts.

There are walnuts, almonds, pecans, peanuts, hazelnuts etc. and they all come in so many flavors. Even if I want to buy some I end up buying nothing, simply because I get so confused with so many flavors that I finally just let it be. What an irony!

But then I thought it would be better to make them at home. I can make one flavor at a time, munch of it happily and then move on to the next flavor.

So I first tried these honey roasted almonds and let me tell you these are one of the easiest snacks/treats that you can make in very less time. Also the ingredients required for this recipe are almost always available in everyone’s pantry.

It always helps when a recipe doesn’t call for a fancy ingredient, saves my trip to the grocery store, which by the way happens a lot ever since I started blogging!

The good part is that these honey roasted almonds are delicious, the bad part? they are highly addictive! I think I have finished a bowl already! The recipe is super simple, all you need to make these delicious almonds is whole almonds, sugar, salt, honey and oil.

I added a pinch of cardamom powder but that it totally optional. These honey roasted almonds can be a great make ahead snack for any festive occasion like Diwali & Christmas. You can even gift them to your friends, pop them in a gift bag and tie with a beautiful ribbon.

Method

Measure 2 cups of whole almonds and place them on a baking sheet in a single layer. Place the baking sheet in an cold oven and then switch it on and set the temperature to 350 F degrees. Roast the almonds in the oven, stirring them twice in between till they are fragrant and roasted. This will take around 12-15 minutes.

While the almonds are in the oven, combined sugar and salt in a bowl. Set aside.

Meanwhile in a wide pan combine honey, cardamom powder, oil and water and bring it to boil on medium heat.

Honey-Roasted-Almonds-Recipe-Step-1-notitle-cwmTake out the almonds from the oven and stir them into the boiling mixture.

Cook till all the liquid is absorbed by the almonds, this takes around 5 minutes.

Remove the almonds from stove top and transfer them into a bowl. Honey-Roasted-Almonds-Recipe-Step-2-notitle-cwm

Pour the sugar-salt mixture on top of almonds.

Mix to coat all almonds. Make sure all almonds are completely coated.

Transfer the almonds to a parchment paper and let them dry completely.

I made these yesterday, luckily I only made half a batch as I ate the whole lot in one day. I added 1/2tsp of cinnamon too. Crunchy and delicious.

Mine didn’t turn out so well. They were sticky and hard. I can only think my temperature was too high when cooking in honey mixture, even though I turned it down. The sauce was not all the way cooked in because I smelled burning. It was over 5 minutes. The sugar mixture just melted into nuts. They are still good, just sticky . They don’t look at all like your picture.

  3. I made this and they taste great. I soaked the almonds first and they are soft. Will they go back to a slight crunch? Do you soak your almonds first?

    1. hmm I have never used splenda in cooking or baking. Do you replace sugar with splenda and results are same? If yes then go ahead 🙂

Soooooooooooo good and sooooo easy! I added more salt than the recipe called for as well as some cayenne pepper. Gives just a wee bit of heat. Didn’t last 24 hours in my house.

Can I skip the roasting step if I have roasted almonds to begin with? Just want to make use of the roasted almonds in my pantry first

  6. Hi. I tried them today and they came amazing. Loved them. I just have doubt about their shelf life. Till how many days are they good to consume because I dont eat too much of almonds. Hoping you will see this and reply to my question.

Really easy and delicious. Nice discovery. Do you have a recipe for roasted chickpeas? I’m new, so will browse around for other recipes…this here is great!

    1. Hi Ayanna, glad you liked these! No, I don’t have a recipe for roasted chickpeas. Will surely put one soon! thanks for dropping by!

  8. This is great! I made them without adding the sugar at the end and my kids loved them. The second time I tried them, however, I doubled the recipe and the oil is way too much. I’m not sure what the right ratio is at this point.

    1. hmm I have never tried doubling the recipe, but I will give it a try and get back to you! Glad yours kids loved them Cheryl 🙂

  9. ive always been really lazy and bought flavoured nuts from the shops.. definitely need to try making my own. these look delicious!
