Honey roasted almonds are one of my favorite snacks to make at home! Sweetened almonds with a touch of salt are highly addictive!

I don’t know about you but I love candied nuts, these little treats are so addictive and so delicious that it’s hard to keep your hands off them. Whenever we go to farmer’s market I see these little shops selling delicious looking candied nuts.

There are walnuts, almonds, pecans, peanuts, hazelnuts etc. and they all come in so many flavors. Even if I want to buy some I end up buying nothing, simply because I get so confused with so many flavors that I finally just let it be. What an irony!

But then I thought it would be better to make them at home. I can make one flavor at a time, munch of it happily and then move on to the next flavor.

So I first tried these honey roasted almonds and let me tell you these are one of the easiest snacks/treats that you can make in very less time. Also the ingredients required for this recipe are almost always available in everyone’s pantry.

It always helps when a recipe doesn’t call for a fancy ingredient, saves my trip to the grocery store, which by the way happens a lot ever since I started blogging!

The good part is that these honey roasted almonds are delicious, the bad part? they are highly addictive! I think I have finished a bowl already! The recipe is super simple, all you need to make these delicious almonds is whole almonds, sugar, salt, honey and oil.

I added a pinch of cardamom powder but that it totally optional. These honey roasted almonds can be a great make ahead snack for any festive occasion like Diwali & Christmas. You can even gift them to your friends, pop them in a gift bag and tie with a beautiful ribbon.

 

Method

Measure 2 cups of whole almonds and place them on a baking sheet in a single layer. Place the baking sheet in an cold oven and then switch it on and set the temperature to 350 F degrees. Roast the almonds in the oven, stirring them twice in between till they are fragrant and roasted. This will take around 12-15 minutes.

While the almonds are in the oven, combined sugar and salt in a bowl. Set aside.

Meanwhile in a wide pan combine honey, cardamom powder, oil and water and bring it to boil on medium heat.

Cook till all the liquid is absorbed by the almonds, this takes around 5 minutes.

Pour the sugar-salt mixture on top of almonds.

Mix to coat all almonds. Make sure all almonds are completely coated.

Transfer the almonds to a parchment paper and let them dry completely.

Store in an airtight container and munch away!

  • 1/2 teaspoon salt
  • 3 tablespoons honey
  • 2.5 teaspoons oil I used canola oil
  • 2.5 tablespoons water
  • pinch cardamom powder

Notes

  1. Using cardamom powder is optional, you can also add cinnamon, nutmeg etc.
  2. A lot of recipes suggest using almond oil but I used canola oil in this recipe. Use any odorless/flavorless oil.
