I love making mushrooms a part of holiday entertaining, I feel they are versatile, delicious and so easy to cook. Most of the time, I cook them the Indian way, whether it’s the tandoori mushrooms or the mushroom tikka but once in a while I also make beautiful crescent rolls ring with them!

If you share my love for mushrooms, then you will enjoy these mushroom pepper fry naan sliders. I have used cremini mushrooms for this recipe, they have a deeper flavor than the white ones but if you can’t find them, the white mushrooms will also work.

Method

I highly recommend making this dish in a wok on high heat. First, crackle some mustard seeds in hot oil and then add the onions along with dried red chilies.

Cook the onions and peppers on high heat (along with curry leaves) for around 2 minutes and then add the ginger-garlic paste. Cook for 1-2 minutes or until the raw smell of ginger garlic goes away.

The addition of tomato paste adds a depth of flavor. Add all the powdered spices, and salt at this stage. The spices need to be cooked only for 45 seconds to a minute on high heat.

Add the sliced mushrooms along with freshly ground black peppers and continue to cook the mushrooms on high heat. It will take only 3 to 5 minutes for the mushrooms to cook. You don’t want them super mushy for these sliders.

Warm up some of those mini naans (I got mine from Costco) and then apply the prepared tzatziki on top of the naans. Top with the mushroom pepper fry and serve! You can serve these as a sliders or flatbread like an open slider.

Manali’s Tips

  • The mushroom fry gets the heat from the freshly ground black pepper. If you want to make it spicier, use some red chili powder in the recipe.
  • This entire recipe has to be made on high heat and I highly recommend using a carbon steel wok for the best flavor.
  • You can make the filling a day in advance and assemble the sliders on the day of your party.
  • Top these with pickled onions for even more complex flavors.

Instructions

Make mushroom pepper fry

  • Heat 1 & ½ tablespoons oil in a carbon steel wok on high-medium heat. Add ¾ teaspoon mustard seeds, ½ teaspoon fennel seeds and let them crackle. Then add 2 dried red chilies (broken) and stir.
  • Add 1 medium onion (chopped), 1 medium green bell pepper (chopped) and 6-7 curry leaves. Cook for 2 minutes on high heat.
  • Then add 1 tablespoon ginger-garlic paste and cook for 1 minute. Add 2 tablespoons tomato paste and cook 30 seconds.
  • Now, add the spices, 1 teaspoon coriander powder, ½ teaspoon cumin powder and 3/4 teaspoon salt (to taste). You may also add some red chili powder at this point. Sprinkle around 1 tablespoon water and cook the spices on high heat for 30 seconds.
  • Now, add 450 -500 grams mushrooms (sliced), along with ½ teaspoon black pepper (freshly ground). Cook the mushrooms on high heat for 3 to 4 minutes until cooked. They should have a nice bite to them.

Make Tzatziki

  • In a bowl mix together, ½ cup Greek yogurt (I used full fat, plain), 2 garlic cloves (grated), 1-2 teaspoons lemon juice, 1 tablespoon olive oil, 2 tablespoons mint leaves (chopped), ½ cup cucumber (grated), and ¼ teaspoon salt using a wire whisk. Your tzatziki is ready.

Assemble the sliders

  • Warm up 50 mini naans in microwave or oven. Apply the prepared tzatziki on each naan slider (around a teaspoon on each). Add the prepared mushroom pepper fry on top of each naan. Close with another mini naan to make a slider. You can garnish them with mint leaves. Serve immediately!

Notes

  1. I have used naan dippers that you get at Costco. If you can’t find then, you can also use regular mini rolls for these sliders.
  2. You can definitely add some cheese to these sliders, I would recommend cheddar cheese.
  3. To cut short the process, use pre-sliced mushrooms that you can buy at the grocery store.
