Pumpkin Sandwich Cookies for Halloween

Can you guys believe that Halloween is almost here? It’s 1st of October today and before you blink your eyes it would be 31st October and time for all the tricks and treats! I love Halloween, it’s not something I grew up celebrating but ever since I discovered it some 6 years back, I look forward to every year. It’s such a fun festival, everything right from the costumes to the food is fun!

I celebrated Halloween for the very first time in 2009 when I was studying for my MBA in Scotland. I remember roaming on the streets at 1 am in the night and being so fascinated by everyone’s costumes. People are seriously brilliant, they come up with such amazing costumes. I also remember wondering how they were wearing these tiny/thin/lacy costumes when it was freezing cold outside. Well Scotland is always freezing but still end October is really cold. Anyway back to the creative costumes, so yeah people are so creative and I am the most uncreative person! All I could do in the name of Halloween costume was to put a lot of white powder on my face!

Halloween Entertaining

While creative costumes are definitely not my forte, I can show some creativity when it comes to food. To make your Halloween Party a little more colorful and delicious, I am sharing with you a recipe for these Pumpkin Sandwich Cookies. Don’t they look delicious with all the frosting?! YES!

Pumpkin Sandwich Cookies

It’s hard to resist all the Halloween goodies at Walmart these days. Seriously it’s like my favorite one-stop shop for all things Halloween. So when I thought of making these pumpkin sandwich cookies, I knew where I was heading to. I have to confess though that it was super tough to resist buying everything on display for Halloween. I mean so many candies, fun decors, baking mixes, sprinkles, I just wanted everything! But considering my 2nd pantry is also becoming crowded now, I decided to drop the plan and get only what I needed for the recipe.

I thought these pumpkin sandwich cookies would be perfect for Halloween party! Talking about Halloween party, I am planning to throw one this year. I have been looking around Pinterest for different ideas and I haven’t zeroed on yet at a theme. There are so many wicked ideas, do you guys have a favorite theme? While the theme remains undecided, one thing is sure that these pumpkin sandwich cookies will definitely be a part of my Halloween celebration. After all we are talking about warm spices + pumpkin + halloween sprinkles + tons of frosting = guaranteed hit at Halloween party!

To make these pumpkin sandwich cookies you will need the regular flour, sugar, butter and pumpkin and pumpkin pie spice. And since we are making these for Halloween, I decided to color the frosting in 3 colors – orange, black and white. So you will need food colors too and of course some sprinkles never hurt. Look out for fun Halloween sprinkle at Walmart!

Pumpkin Sandwich Cookies Recipe

You will love these pumpkin sandwich cookies, especially if you like little cakey cookies. They are super soft, in fact they almost melt-into-your mouth. The moistness comes from brown sugar and pumpkin puree. The warm spices makes these cookies perfect for this time of the year.These sandwich cookies will look great on your Halloween party table. Besides who can resist soft cookie sandwiches bursting with all the warm flavors?!

Here’s how you make them!

 

Method

In a bowl whisk together all purpose flour, salt, baking soda and pumpkin pie spice. Set aside.

Using the steel bowl of your stand mixer fitted with paddle attachment or using your hand mixer, beat cream butter till smooth and creamy.

Add brown sugar and cream butter and sugar together till smooth.

Add egg, vanilla extract and pumpkin puree and mix till combined.

Add the flour mix to the wet ingredients and mix till combined.

Cover the cookie dough and chill in the refrigerator for 2 hours. Because the dough is little sticky, it’s easier to work with it when it’s chilled.

Once the dough has chilled, line 2 baking sheets with parchment paper. Take 1/8 cup (around 2 tablespoons) of dough per cookie.

Because I wanted flatter cookies, I pressed each with the back of a measuring cup. This step is optional.

Bake the cookies at 350 F degrees for 12-13 minutes. Remove from oven and set aside to cool.

While the cookies are cooling down, make the filling for the cookie sandwich. Beat together butter and cream cheese till smooth and creamy. Add powdered sugar, 1/2 cup at a time, mixing well after each addition.

Add vanilla extract, milk and beat till frosting is smooth and everything is well combined.

Divide the frosting in 3 parts.  Leave 1 part as such and color the remaining 2 with orange and black food color.

Transfer filling to a pastry bag (or you can use you spoon). Place one cookie on a flat surface, fill it with the prepared frosting and then top it with another pumpkin cookie to complete your pumpkin sandwich cookies! Enjoy!

* Remember to chill the dough for a minimum of 2 hours.

* The total time for this recipe as mentioned below includes the chilling time of 2 hours.

Ingredients 

Pumpkin Cookies

  • 2⅓ cups all purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • ½ cup butter unsalted, at room temperature

  • 1 teaspoon vanilla extract
  • ½ cup pumpkin puree
  • 1 egg large, at room temoerature

Cream Cheese Frosting

  • ½ cup unsalted butter at room temperature
  • 4 oz cream cheese at room temperature
  • 1 teaspoon vanilla extract
  • 2.5-3 cups powdered sugar
  • 1 teaspoon milk
  • orange food color
  • black food color
