Strawberry Mango Lime Sorbet

Being your own boss is fun as well as scary. It’s fun because you get to work on your own terms. I feel blessed to have this opportunity where I can work in the comforts of my own home. However the scary part is that it becomes super hard to draw a line. Someday, it feels like I am working 24 x 7 and I don’t know when to stop because there’s no boundary. My husband comes back from work, takes break, watches TV. Now I do that too but in between watching TV, my laptop will always be there next to me and I will scheduling pins or doing some tweets in between. See, hard to know when to stop? I am talking about this because yesterday I kept working past midnight and I just felt too overwhelmed by all of it. Working alone on your own is not easy. Any thoughts/suggestions on how to keep your sanity while working from home? I would love to hear from you guys.

Anyway, I often browse youtube/pinterest to look around for trending recipes and it’s then when I came across these easy no-machine fruit sorbet recipes form Gemma Stafford. I absolutely love her channel and recipes. I thought the sorbet looked too easy to not give them a try and I am so glad I did. Only 4 ingredients and 10 minutes and you will end up with this creamy, refreshing and delicious Strawberry Mango Lime Sorbet.

Strawberry Mango Sorbet Recipe

Mango and strawberries are 2 of my favorite fruits and they also just happen to be in season. So I thought of combining these 2 and also adding in little bit of lime to make it all summer-y and fresh. The sorbet turned out so good, like I cannot believe that something so easy and be so delicious. You only need 4 ingredients to make this.

1. frozen mango, now fresh mangoes would work too but it’s best to use frozen for thicker consistency.

2. frozen strawberries, again like mangoes, use frozen strawberries

3. condensed milk

4. lime

Just combine everything together in a powerful food processor and you are done. So easy! No ice cream machine, no fancy equipment, absolutely nothing at all. This sorbet is way too refreshing, we ate so much of it during the weekend. It tasted great with some fresh mangoes and strawberries on top!

Method

To a food processor add frozen mangoes, frozen strawberries, lime juice and lime zest.

Add condensed milk and run the food processor for 3-4 minutes or till everything is well combined and mixture looks smooth.

It should have a creamy consistency once done, as you can see in the picture. Transfer to a freezer safe container and freeze overnight.

Serve the strawberry mango lime sorbet with some fresh mango and strawberries and enjoy!

* I ended up using little extra lime zest because I adore lime in sorbet. I used zest of 1.5 limes.

* Adjust condensed milk to taste. You may use 1/4 cup condensed milk to keep it little less sweet.

  • 1.5 cups frozen strawberries
  • 1.5 cups frozen mangoes
  • 1/3 cup condensed milk
  • 1 teaspoon lime juice fresh
  • zest of 1 lime
