Homemade Strawberry Syrup made from fresh strawberries! This is my favorite syrup to use on pancakes, waffles, french toast & more!

I am eating so such seasonal stuff in India these days especially things that I don’t really get in the US. For example gajar halwa (carrot pudding) made of red carrots! You do get carrots in the US of course but any north Indian would vouch for the fact that the halwa made from red carrots that you get during winters in Delhi is just no match for the halwa made from orange carrots. It is for this reason that I have stopped making gajar halwa in Seattle. I just can’t bring myself to like the taste of gajar halwa made of orange carrots, it just tastes like carrot mixed with sugar and nothing else really.

Other than the halwa, I have also been gorging on Matar Paratha. Whole wheat flatbread stuffed with sweet green peas (which we only get during winters) are such a treat. My mom used to make them regularly during winters, we would eat it for breakfast or even lunch/dinner. Matar paratha made with frozen peas is just so bad!  Yeah I am prepared to gain at least 5 pounds during this trip!

It’s always fun to eat what’s in season. For example strawberries would be in the market soon. You do get berries all year round but the berries that you get in spring and summer are just so juicy and sweet and just amazing. I always end up buying way more than we can possibly consume and then they get added to smoothies, desserts and lots more. One thing which I often make with fresh strawberries is this homemade strawberry syrup.

This Strawberry Syrup

I make a batch of this strawberry syrup whenever I get a big box of strawberries from Costco. Once you have the syrup ready, you can use it to flavor pretty much everything. We love it on top of our pancakes, so good! In case you are planning a special breakfast or brunch this Valentine’s Day, try topping it up with this homemade strawberry syrup, it will definitely make it so much better!

Method

Rinse the strawberries and chop off the stem from the top. Dice them into quarters or halves and place them in a pan on medium heat.

Add sugar, lemon juice and 1/2 cup water to the pan.

Let it all come to a boil and then let the syrup simmer on medium heat for 10-12 minutes until strawberries are very soft.

Then mix 2 teaspoons of cornstarch with 1/4 cup water, stir and add to the pan.

Let the syrup simmer on low-medium for 6-7 minutes.

Once it thickens up a little, remove pan from heat and let the syrup cool down.

Store in an airtight containers and keep it refrigerated. Use this homemade strawberry syrup as a topping on pancakes, yogurt! Yum!

Ingredients 

  • 2 cups strawberries 10 oz
  • 1/2 cup granulated white sugar 100 grams
  • 1 tablespoon lemon juice 15 ml
  • 1/2 cup water 120 ml
  • 2 teaspoon cornstarch mixed with 1/4 cup water

Notes

  1. Adjust sugar to taste. The strawberries that I used here were not very sweet so I added more sugar. If your strawberries are sweet, cut down on the sugar quantity.

    1. You may, freeze in ice cube trays maybe? individual portions? It should be okay for few months, not exactly sure how many as I haven’t tried freezing it myself

    I just made this and put it on top of some protein pancakes and it was DIVINE! I used probably around â…“ cup of sugar because I had sweet summer berries.

  2. Hi I made this but I didn’t realise till I cooled it that it’s not sweet enough, I stored it in the fridge but it’s too sour to use currently, can I add some more sugar n put it back on the stove?
