Its March 1! Spring is around the corner and I couldn’t be happier. I have always had this aversion to cold, which actually is surprising because I grew up in Delhi where it’s terribly hot during summers (actually almost throughout the year!) so I should love winters. But ever since I can remember I have always disliked cold weather, I can’t even tolerate the air conditioner, it makes my head spin. So when I am in India, even if it’s 115 F, I sleep with just the fan on. Yeah you can imagine, no one wants to share the room with me!

I like warmer weather because then I don’t need to be wrap myself in 10 layers of clothes! I also love it for the fresh produce and for icy cold treats like this Iced Coconut Maple Mocha. Just looking at it makes me feel refreshed!

As soon as the weather warms up, I find myself at coffee shops pretty regularly because the iced coffee drinks that you get at these shops is my weakness. But that’s obviously not a good habit for my pocket and so I have found a way to become my own barista and whip up customized iced coffee right in the comforts of my home!  You can now make iced coffee (like the one you get at store) at home! The best part about this is that you can customize it to your taste and it will also help you save bucks. So, it’s a win-win situation!

You guys know that I love coffee but my husband not so much. He actually likes iced coffee if it doesn’t taste bitter and this one fits the bill perfectly. To make this Iced Coconut Maple Mocha, simply pour coconut milk along with ice cubes in a glass. Add your favorite chocolate sauce and then pour over brewed coffee. Add a splash of maple syrup and enjoy. I topped mine with some whipped cream and extra chocolate sauce to make it look extra fancy and I suggest you do the same!

Ingredients 

  • 1/2 cup coconut milk
  • 1/2 cup brewed coffee cooled
  • 1 tablespoon maple syrup or to taste
  • 1.5 tablespoons chocolate sauce
  • 5-6 ice cubes
  • whipped cream optional

Instructions 

  • To a tall glass add ice cubes and coconut milk.
  • Add maple syrup, chocolate sauce and stir.
  • Pour over the brewed coffee.
  • Top with whipped topping (optional) and enjoy!
