Sweet Potato Apple Pecan Salad

I never thought of sweet potatoes much as a kid, no I didn’t hate them, it’s just that I didn’t have an opinion about them. Actually in India, the only way sweet potatoes were eaten in my home at least was by roasting them on fire and then sprinkling some chaat masala, lemon juice and salt on top. I don’t remember eating them in any other way like in curries, salads etc. So for me they always remained one of those things that we snacked on sometimes. But I fell in love with sweet potatoes after I moved to States, there was just so much to do with them and I can’t have enough. One of my favorite way to eat them these days is in salads.

Some of my favorite fall favorites are apples, sweet potato, pecans and so I combined all those in this really refreshing fall salad! This Roasted Sweet Potato Apple & Pecan Salad has roasted sweet potatoes (obviously!) , sweet and juicy apples and Sahale Snacks Valdosta Pecans Glazed Mix! These aren’t just ordinary pecans, these are roasted pecans with cranberries, orange zest and a pinch of black pepper. It’s so good you guys!

For this easy salad, I roasted some sweet potatoes in the oven and then tossed with fresh apples, arugula, pecans glazed mix and a simple dressing made of olive oil, vinegar and maple syrup. It was so simple and so good! This salad makes a perfect light lunch and doesn’t take much time to put together. The Sahale Snacks Pecans Glazed Mix add so much flavor to this salad, especially I loved the touch of orange and black pepper in these! These nuts aren’t only great for topping your salad but also great for snacking. I love eating them straight out of the bag.

This salad is perfect for those days when you want something quick for lunch (or dinner!). Right now the market is full of apples and this salad is a great way to use them. I also loved using arugula here but you may also use spinach or any other green of your choice in place.

 

Method

Line a baking sheet with parchment paper or silicone mat. Toss diced sweet potatoes with 1 teaspoon olive oil and salt and bake at 425 F degrees for 15-20 minutes or until fork tender.

While sweet potatoes are in the oven, make the salad dressing by whisking together olive oil, rice vinegar, maple syrup, lime juice, salt and pepper.

In a large bowl toss together roasted sweet potatoes, sliced apples, arugula and Sahale Snacks Pecans Glazed Mix. Pour over the dressing and mix to combine.

You may chill the salad before serving. I personally like this salad chilled!

Ingredients 

  • 2 cups diced sweet potatoes
  • 1 teaspoon olive oil
  • pinch of salt
  • 2 small apples 300 grams
  • 4-5 oz arugula
  • 1/2 cup Sahale Snacks Pecans Glazed Mix

Dressing

  • 3 tablespoons olive oil
  • 1 teaspoon rice vinegar
  • 1.5 tablespoon maple syrup
  • juice of 1 lime
  • salt to taste
  • black pepper to taste

Instructions 

  • Pre heat oven to 425 F degrees. Line a baking sheet with parchment paper or silicone mat.
