Avocado Tomato Sandwich with Baby Spinach

You know some recipes are so simple that you actually think if it qualifies enough as a recipe to share. But then the very same dishes are delicious and even though super simple to make, you cannot resist sharing them. And that’s exactly my thoughts about this Avocado Tomato Sandwich with Baby Spinach. This sandwich actually has some of my favorite things – there’s avocado (which I can never have enough of) and then there’s tomato and spinach! Talk about all the veggie goodness in 1 filling sandwich.

I often make this sandwich for lunch when I don’t feel like cooking. And these days I have been making it a lot more because I simply have no time! Most of my kitchen stuff is already packed and so I am totally dependent on easy pasta and sandwiches. I will get into the business of cooking my complete meals once I settle in our new house, which will obviously take a while. I am so excited to move this weekend in my own house but at the same time I am going to miss this little apartment. It’s where I really got into food blogging, learnt so much and had loads of fun. But I’m sure things will be even better in the new house and I’m also hoping there will be lots of sunshine! ( YES so important for a food blogger!).

Avocado Tomato Spinach Sandwich

This sandwich doesn’t make more than 10-15 minutes to put together. You can use any bread of choice, I prefer the whole wheat bread in this sandwich. You will notice that I used little chat masala in this recipe, which is basically a mix of spices and you can easily find it in any Indian grocery store. It has a little tangy taste and is sprinkled on top of Indian street food/snacks and I can never have enough of it! I think the chat masala tastes so great with avocado. Of course if you don’t have it, just skip.

Method

Take 2 bread slices of your choice and toast them. Apply mayonnaise on one of the slices and then sprinkle some salt and pepper on top. Peel the avocado and take out it’s pulp. Mash half of it with a fork, add cilantro, salt and pepper to taste and mix. You can also add some lemon juice in the avocado mix. Now apply this avocado mixture on the second slice. Cut the other half of the avocado into slices and set aside.

Place sliced tomatoes on top of the avocado toast.

Place handful of baby spinach leaves on top of tomatoes and then the sliced avocados. Sprinkle chat masala (optional but recommended).

Close the avocado tomato sandwich and enjoy immediately!

Avocado Tomato Spinach Vegetarian Sandwich

* Toasting the bread is optional. You can even grill it.

* You can add onions and lime juice to the avocado mix and make it like a guacamole and then spread it on the bread slice.

Avocado Tomato Sandwich with Baby Spinach makes a healthy and filling meal.

Ingredients 

  • 2 whole wheat bread or any bread of your choice
  • 1 avocado divided
  • 1 tablespoon cilantro chopped
  • 1 to mato cut into rounds
  • handful of baby spinach around 15 leaves
  • 2 teaspoon mayonnaise
  • teaspoon chat masala
  • salt to taste
  • pepper to taste

Instructions
