Holiday season has arrived sooner than expected. And with it’s arrival begins all the festivities which includes lots and lots of food. Isn’t it amazing how all festivities and traditions revolve around food. I know my mom would get super busy days before the actual family gatherings. I feel no celebration is complete without homemade meals. As much as I eat outside (and yes I eat out a lot!) for holiday entertaining and family gathering, I feel food should always be homemade. The personal touch is what makes the meal so special and delicious!

Around the holidays, there’s always a lot to do. Lot of shopping, cleaning, cooking and so much more. I think there’s so much food to prepare and very little time. Unfair, isn’t it? And that’s exactly the reason I wanted to share some super easy recipe with you guys for Holiday Entertaining. Recipes which not only taste delicious but also take little time to prepare like this Mushroom Spinach Ricotta Crescent Ring. Doesn’t it look wonderful?

I have always been a fan of Pillsbury Crescent Rolls, they are so versatile. Especially during the holidays, I use them all the time to make easy and quick recipes. If you guys remember I shared these pecan cream cheese sweet rolls last holiday season using them. So really the options are endless, you can literally make anything with these rolls and it’s sure to be a hit with the crowd!

This mushroom spinach ricotta crescent ring is super easy to to put together. To cut short the prep time, I used chopped frozen spinach here and I would recommend you do the same because it works so well in this recipe. I mean why to not save some time in the kitchen and spend more time with family. That is what holidays are all about, isn’t it? Rest of the steps are simple, once the filling is done, you simply unroll both the cans of dough, separate the triangles and arrange them in form of a circle and then put the filling on the dough close to the center. And then of course you bake it and eat it! Yum! Hope you guys enjoy this mushroom spinach ricotta crescent ring this holiday season!

 

Method

 

Heat 2 teaspoons oil in a pan on medium heat. Once the oil is hot, add chopped garlic and onion. Saute for 2 minutes.

Add chopped mushrooms and mix.

Then add some salt, black pepper, 1/4 teaspoon smoked paprika and 1/4 teaspoon cayenne pepper and mix.

Cook for 3-4 minutes till the moisture from mushrooms dries out and they turn brownish. Add chopped spinach. [I used frozen cut spinach which was thawed according to instructions on the package] and mix.

Cook for 2-3 minutes till everything is mixed and mixture dries out.

Transfer mixture to a bowl and then add ricotta cheese, shredded parmesan-romano cheese, Italian seasoning, remaining 1/4 teaspoon cayenne pepper & 1/4 teaspoon smoked paprika. Adjust seasoning at this point.

Also add the chopped cilantro and mix everything till well combined.

Open Pillsbury Crescent Rolls, separate into 16 triangles. Arrange triangles overlapping on the edges to form a circle on a baking sheet lined with parchment paper.

Spoon mushroom-spinach-ricotta mixture on half of each triangle closest to center of ring.

Bring each triangle up over the filling and tuck under the bottom layer of dough to seal it.

Bake the crescent ring at 375 F degrees for 20-25 minutes until the dough turns golden brown.

Let the crescent ring cool for 10 minutes before cutting into slices!

* You may use more parmesan-romano chees if you like. I added little on the lesser side.

* Cilantro is optional in this recipe, you guys know how much I love cilantro so I ended up using it in this recipe.

Mushroom Spinach Ricotta Crescent Ring - an easy vegetarian appetizer for the holiday entertaining!

Ingredients 

  • 2 teaspoons oil I used vegetable oil
  • 2 garlic cloves large
  • 1 small red onion finely chopped
  • 10 oz 284 grams chopped spinach, frozen thaw according to instructions on the package before using
  • 8 oz white mushrooms finely chopped
  • 1/2 teaspoon black pepper or to taste
  • 3/4 teaspoon italian seasoning
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1/4 cup chopped cilantro
  • 1/2 cup ricotta cheese
  • 1/4 cup shredded parmesan & romano cheese
  • 2 x 8oz cans of Pillsbury Crescent Rolls
  • salt to taste

Instructions
