Strawberry Lassi

Spring is finally here with Easter less than a week away. While I always want to share dessert recipes for holidays this time I am making an exception. Today I am sharing with you a super simple recipe, which traditionally doesn’t belong on the Easter table but I see no reason why it shouldn’t?! It’s fresh, delicious and perfect for spring. I think that qualifies my Strawberry Lassi for the Easter brunch. Isn’t it?

Lassi refers to any yogurt based drink in India and it’s quite popular in US as well. The most popular lassi in this part of the world is Mango Lassi, I swear I have seen it in every damn Indian restaurant I have visited in this country. But in India the most popular lassi is actually sweet lassi and salty lassi , these are without any fruity flavors, the salty one does have some spices added to it. With temperature in 100s during May-June, lassi is quite a popular drink back home. It’s refreshing and also good for you!

It’s so funny that I started enjoying a lot of things after I started my food blog [which basically means after I started cooking] and lassi is one of them. Mom used to make sweet lassi for dad often but I would never have even a sip of it. I just never wanted to drink lassi and look at me now, posting a recipe of the same thing on my blog! One another such thing is rajma, never liked it before, love it now when I make it!

Anyway back to my strawberry lassi. I made this for 2 reasons 1) I got a huge box of strawberries from Costco and as usual I had to use it in some recipe. I rarely buy fruits and veggies from Costco just because we can never finish with them but this time around a friend was visiting us so I got the big box and even then it was not over! 2) It’s spring so strawberry recipes just make more sense! 😀

Indian Strawberry Lassi

Now I have to say that the strawberry lassi was delicious. I drank half of it while trying to click the pictures. To make this lassi is simple, puree the strawberries with sugar and then add yogurt and milk to it. For a creamier lassi, you can even add some half & half to it. I also added cardamom powder and little rose water to this but that’s optional. I would actually recommend both though, because I love the flavors they imparted to the lassi.

Oh and yes lassi is supposed to be quite thick, mine isn’t that thick simply because I prefer it this way. If you want thicker lassi, just increase the amount of yogurt to 1 cup and it should be fine!

Enjoy!

* You can use honey in place of sugar in the recipe.

I needed to get rid of some strawberries before they went bad, and this was the perfect solution. I do wish I had the rose water, but it certainly was delicious! I will definitely make this again.

  4. This looks amazing. I was wondering is there a certain kind of yogurt to use ? Such as extra protein, like chobani and is it plain yogurt ? Also where do you get rose water ? I never had heard of that before.

    1. Hi Rose, I have used plain yogurt here but you may use any yogurt of your choice. Strawberry yogurt will work great too! As for the rose water, you can get it any India or Middle Eastern grocery story. Hope that helps!

  5. A question: what kind of yogurt to use? Plain, low fat, flavored or greek yogurt? I am new in trying recipes so, I really need to know specifics in ingredients. So sorry!
But I love your milkshakes and coffee drinks. I have tried your salted caramel mocha and the coffee caramel milkshake. Delicious and perfect!

    1. Hello Tanjun! Thanks for reaching out, for this recipe I used regular plain yogurt. You can definitely use strawberry for a stronger strawberry flavor! Hope that helps and thanks for trying out those recipes, glad you liked them! 🙂

  17. What a beautiful drink, Manali! I adore mango lassi and since I’m a strawberry lover this strawberry lassi sounds perfect especially for spring!

  18. So we have our fair share of lassi around here. We normally do regular lassi because you get such a huge can at the indian store and we never go through it. I mean how much mango puree can one person use. I have never thought of making something other then mango or regular lassi. Brilliant idea!! I love homemade version better than at indian restaurants. They just make it to watery for me. I like it thick and this looks delicious. I am so making this when my hubby gets home!! Yum! 😉 Pinned!!

    1. I know how much mango puree can one use! I am sure you will like this strawberry version Cyndi, it’s good for a change 🙂 and yes homemade is always better!

  19. I’ve never been into the plain lassi, love this though. You are so right, we try so many more different things after starting the blogs. It’s good and a bad thing..I just eat a lot, and workout like crazy..:).

    1. Ha! Me too, never liked plain lassi! I need to get back to running, injured my knee and since then I have not been doing any workout, only eating 🙁

  20. I love strawberry, and I love lassi too! That means, you are inviting me for this refreshing treat! Indeed perfect for EASTER! 🙂

  21. So fresh and pink and pretty! I’ve never heard of lassi before, but it sounds right up my alley – and this will look so perfect on the Easter table. 🙂

  22. I’ve never had lassi before, but it sounds a lot like those yogurt drinks you can buy, that my kids are incessantly asking for! I’ll have to try this out for them!

    1. Order a mango lassi next time you go to an Indian restaurant. I am sure you will like lassi, it also super easy to make! 🙂

  23. Lovely! We have a similar drink in Brazil, but without the spices and rose water. This version sounds amazing. I could definitely have one right now!

  24. Oooooh, lassis are my favorite! This one looks perfect in my book, Easter-y or not 🙂

  25. Not only does this drink look delicious, it’s pretty as well. I love the color! I can see myself sipping on this while is sit out on the deck and soak up the afternoon sunshine.

  26. This drink looks gorgeous, Manali! Very similar to a smoothie! And I love that you can use rose water in here, too. Sounds delicious!
